Have you heard of sulphites?

Sulphites are a preservative added to wine, beer, dried fruits, fruit juices, cordials, sausages and many other processed foods to stop them from browning, for example the dried apricots on the left have had sulphites added, whereas the ones on the right have not

Sulphites aka sulphur dioxide, sodium sulphite, sodium bisulphite, sodium metabisulphite, potassium bisulphite, and potassium metabisulphite are considered to be a major allergen in the UK, which means they have to be listed in bold on food labels
