"This is the 4th fundraiser for the Scottish SPCA. I experienced all four seasons during my run today. It was rainy and windy at first, so I told myself I would just do a short run. However, after one lap, the sun came out and I ended up doing another round. It felt like going through all four seasons in one run!

Many people ask me: how can I be motivated to lose weight/ be healthy/ continue with my goals?
The main answer is you need to start with your mind.
This is so true, to get your mind right it helps to make a list of your values and prioritise them. And compare them to how much effort you are putting on them.
For example:
If your highest value is health it will priorities as high.
But when you do not put a lot of effort in that, maybe it is not your highest value, or maybe you need to put more effort to get into that level.

Baking bread at home is not that hard, it has fewer preservatives, salt, sugar, etc, you have more control over the type of flour and you can add many flavors.

For example, in the recipe below, you can change the fennel seeds to caraway seeds or walnuts.

You should try it!

A homemade wholemeal fennel bread!
The recipe :
A wonderful 100% whole flour fennel bread (large one or 2 medium)

Ingredients:
500 gr of whole flour
1 Tbs of dry yeast or 1/2 cube of fresh yeast
2 Tbs of sugar
1 egg L size (or 60 gr of apple puree without added sugar for vegans) or 20 ml water.
225 ml of water
60 ml of canola/olive oil/ mix of vegan oil and truffle oil. 40ml/20ml.
6 gr of salt
25 gr Fennel seeds/ Carraway seeds.
For brushing before baking: 5 ml milk/ non-dairy milk
* If you do not have a mixer, follow the preparation instructions as usual. You can knead the ingredients in a large bowl.
1. Activate the yeast: Put the yeast in a small bowl with lukewarm water add 2 tablespoons of sugar stir and wait at least 10 minutes.
2. In a bowl put the flour, fennel seeds mother
3. Add the activated yeast, egg (or apple paste for a vegan version) and add the water gradually
4. Operate on medium speed with a kneading hook. Add about a minute until the ingredients are slightly combined.
4. Add canola oil and salt. Turn the mixer back on and process the dough at medium-high speed for about 6-7 minutes until the dough is sticky but pleasant.
5. Cover the bowl with plastic wrap and a little low to rise in a warm place until the dough doubles in volume. 1-2 hours
6. Shape the dough in a bread tin or as a round bread
7. Spread the bread with the milk / non-dairy milk
8. Operate the oven on medium-high heat (190 degrees) and in the meantime allow the bread to rise for another 30 minutes.
9. Place a tray with ice/water cubes at the bottom of the oven to create steam while baking
10. Bake it for 20 minutes, until the bottom has started to turn golden brown and if it sticks to the bottom it sounds hollow.

I am not a vegan or vegetarian person myself, but I try to eat more plant-based food and encourage my patients to increase those in their diets. There are a lot of articles about the benefit of vegan/vegetarian diets new research shows another benefit of those diets.
Research that compared disease severity in those following a vegetarian or nonvegetarian diet in Taiwan discovered that patients aged 65 years and older who followed a vegetarian diet were one-fifth as likely to experience severe symptoms from COVID-19, compared with those who ate a nonvegetarian diet.

The first wave of the coronavirus disease 2019 (COVID-19) outbreak in Taiwan occurred in May 2021. The risk for and severity of this disease vary and are highly dependent on personal habits and comorbidities.
