I love to learn almost as much as I love to teach (and I ❤️ to teach!) so you can imagine how much I was looking forward to visiting Daphne Lambert to learn more about fermented foods.

What a fantastic day! Seasonal foods, turned into gut friendly and utterly delicious dishes in a small group - fabulous! Daphne, thank you so much for passing on some of your fermenting wisdom and for being such a great teacher. I loved it and have come back full of ideas and a renewed enthusiasm for playing around with fermented food.

The photos show some of the delicious food we created, in order:
1. Garlic, ginger and chillis for the kimchi
2. Kimchi
3. Sourdough bread
4. Beet kavass- so delicious and so simple to make!
5. Sauerkraut tasters…also delicious!
6. Dosa made from rice and lentils fermented overnight, labneh and fermented wild garlic leaves.

From an Ayurvedic perspective maintaining our digestive fire is always so important, not burning too hot or cooling down too much. Fermented foods, with their prebiotic and probiotic properties, help our gut microbiota flourish and as we are increasingly aware, a diverse gut microbiota is a healthy gut microbiota.

Do you know why the symbol of Ayurveda is the beautiful lotus flower? Shown with eight petals it represents the eight main branches of Ayurveda, as described in the ancient Ayurvedic text, the Arthava Veda.

These branches are:
• Kayachikitsa – internal medicine
• Salya ta**ra – surgery
• Salakya ta**ra – treatment of ears, nose, throat, eyes and teeth
• Agada ta**ra – toxicology, the study of poisons
• Bhuta vidya – psychiatry, treatment of mental disease
• Bala ta**ra – gynaecology, obstetrics and paediatrics
• Rasayana ta**ra – science of rejuvenation
• Vajikarana ta**ra – aphrodisiacs to increase potency and life

So which areas can you learn from me? My courses aim to give you an understanding of the principles and practice of Ayurveda and we look at the treatment of health problems using lifestyle, diet and herbs. This all comes under the first branch, kayachikitsa. I also enjoy exploring Ayurveda and the Heart and the Mind, which is bhuta vidya, and the science of rejuvenation, which is rasayana ta**ra.
