🛒 INGREDIENTS
25ml sesame oil
3 large eggs, lightly beaten
300g cauliflower rice
500g raw king prawns, peeled & deveined
350g broccoli florets
100g red pepper, sliced
3 cloves garlic, sliced
60ml reduced-sodium soy sauce or tamari
50ml water
25ml rice vinegar
1 tsp black pepper
🍳 METHOD
Heat a wok or large pan over medium heat. Add a little sesame oil and scramble the eggs until just set. Remove and set aside.
Add a little more oil and cook the prawns for 2–3 minutes until pink. Remove and set aside.
Add remaining oil and cook garlic for 30 seconds, then add broccoli and pepper. Stir-fry for 4–5 minutes.
Add cauliflower rice and cook for 4–5 minutes until softened and moisture has evaporated.
Return eggs and prawns to the pan. Add soy sauce, water, vinegar, and black pepper. Stir well and heat through.
Serve hot and enjoy.
