📖 Easy Soda Bread Loaf, one of my favourite staple recipes from the book.

No yeast, no kneading, no rising time, just a wet dough and a good oven. Traditional Irish soda bread uses buttermilk to get its rise, here a splash of stirred into ordinary milk does exactly the same job.

Served alongside a silky tahini dip. 🌱

Wholegrain flour and oat flakes give it real texture too, wholegrain keeping the fibre and nutrients that refining strips away.

With a nod to Darina Allen of , the soda bread expert whose demo at the gathering in Wales was a treat to watch. 🍞

Find this recipe in my new book Soil to Gut, alongside plenty more like it!

Thank you Sustainable Food Trust for recommending Soil to Gut as Summer Reading 2026! ✨

In researching this book I’ve drawn on some excellent reports by the Sustainable Food Trust on food from farming practices which regenerate the soil - I really recommend taking a look at their website to find out more about their global voice for sustainable food and health.

Their valuable work aims to accelerate the transition to more sustainable food and farming systems that nourish the health of both people and planet. 🌎 🤎🧑‍🌾

✨So many conversations

Since launching Soil to Gut last month, it’s been brilliant to be part of many diverse conversations all with the same aim; How do and why should we, centre our health around food farmed in harmony with nature?🌿🌍

We were delighted to welcome The Food Programme to FarmED | Farm & Food Education last week to capture insight around our lunchtime talk on regenerative food and health - bringing in the farming and hospitality angle too with Duchy Dairy farmer Stuart Rogers Stuart Rogers (including the valuable process of measuring on-farm nature benefits, something we need to get much better at connecting with our food choices👍🏻🤎) along with field to fork restaurant owner andrei lussmann working hard to deliver plate-fulls of regional food stories👌

The numerous ‘in passing’ conversations quietly taking place in the field Groundswell Festival among 11,000 people over 3 days😁🧑‍🌾🤎 And the opportunity to share the hidden benefits of nutrition starting in the soil with 5m Books author Tim Parton was well received too🙏

Book signing conversations have introduced me to a whole new world of connecting with so many brilliant people working on a breadth of food, farming and health projects👏👏

Harmony in Food and Farming gathering by Sustainable Food Trust in Wales was probably the most inspiring weekend turning ideas into action- we asked how do we create this groundswell of regenerative excitement into a movement for change, one with clear principles, a recognised force for better food, farming and health?

Then my own book launch with a barn-full of curious minds (sorry to those on the wait list who we just couldn’t squeeze in🙏) Woodoaks Farm feasting soil to gut and touching on points from education, through organic to the health potential of a better, more accessible food system, more localised and rooted in place.

📙It’s been exactly what I hoped my new book would become part of - and it’s only the beginning!
