Mango & Lime Dessert Pots 🍋‍🟩🥭

This might be one of the easiest little puds I have made.

Creamy mango, zingy lime and a little maple syrup, with silken tofu quietly sneaking in some plant-based protein. Finish with pistachios for a bit of crunch.

Blitz. Spoon. Chill. Done.

Simple, fresh and rather delicious. 🤍

You will need👇

1 pack silken tofu
1 ripe mango, or frozen mango
A drizzle of maple syrup
Squeeze of fresh lime juice
Grated lime zest
Ground pistachios, to finish

To make👇

Pop the silken tofu, mango, maple syrup, lime juice and a little zest into a blender and blitz until completely smooth and creamy.

Spoon into little pots and chill. Finish with a sprinkle of ground pistachios and an extra grating of lime.

The other side of the screen when we Zoom.

I teach 5 classes a week live online and you still get the laser focus and the sense of community that is important. You don't get that gentle poke in between your shoulders or glute but you get it verbally instead...
Remember as a child when you close your eyes and you think your mum can't see you, that happens on Zoom. I can see you 😂

I know it's not for everyone but it works and for me I can work with my teacher in America and I wouldn't get to work with some of my wonderful clients without it.

BEETROOT + GOAT’S CHEESE Side ❤️

Another really simple midweek side dish that looks far fancier than the effort involved!

1️⃣Thinly slice your beetroot and let marinade in lemon, salt and honey for an hour or so.

2️⃣Drizzle a plate with a good coating of extra virgin olive oil, then add a layer of thinly sliced beetroot.

3️⃣Crumble over a generous amount of hard goat’s cheese, add a handful of chopped walnuts and finish with a sprinkle of chives and plenty of seasoning.

4️⃣Serve with some chunky bread and griddled chicken and dinner is done.

Beetroot is a lovely addition to your plate — naturally rich in nitrates, which support heart health, as well as providing fibre for digestive health.

Simple ingredients. Very little effort. Delicious. ❤️

SUPER SIMPLE THREE BEAN GREEN SALAD 💚

Peas, green beans and shelled broad beans — all of which you can buy frozen, so this really couldn’t be easier.

Simmer until just cooked, then while they are still warm add a generous drizzle of really good olive oil — quality here does make a difference to the flavour — plenty of finely grated lemon zest and a good amount of seasoning.

That’s it. No complicated dressing. No long list of ingredients. 😍

A really simple midweek side dish to get some greens and fibre on your plate. Serve alongside a BBQ of your choice and dinner is done. 💚

SNACKY TEA 😍

My nan and my mum had such a huge influence on how I cook. As a child, you don’t always want to be different, but I was that kid with the ‘weird’ lunchbox. Looking back, I’m so grateful for that now 😍

When my children were young, we’d often have a snacky tea. There was always cheese, veg, bread and plenty of variety, with very little that was highly processed.

The board above is a little nod to my Nan, who was eating smoked salmon and avocado in the 70s when it all felt wonderfully exotic.

So this isn’t really cooking - it’s simply plating up food that is healthy, delicious and satisfying, while including all the food groups.

And I loved every moment… the sights, the sounds, amazing food, the best tequila and so much love and laughter.

FLAXSEED CRACKERS ☀️

One of the easiest things to make and packed with goodness too!

Flaxseed is a great source of fibre, helping to support gut health and keep digestion moving well. It’s also rich in plant-based omega-3 fats, which play an important role in supporting heart and brain health. 🧠

SALAD INSPO 🥗🧀🥑

The next couple of weeks are foodie things that you can throw together. Not a lot of cooking involved it’s all about the flavour combinations ✨

This is just a plate of goodness, courgette are in season and work so well with the saltiness of the feta. You could griddle them in the bbq for a deeper flavour.

Did you know courgettes contain both soluble and insoluble fibre? 💚

This combination helps support digestion, gut health and regularity, making them a simple way to add more goodness to your plate.

SO simple. SO tasty!

My absolute go to meat that is full of flavour, versatile and hits the protein button.
