Whitby Spiritual Retreats are run regularly for anyone wishing to receive intensive treatment in this divine science. Perfect for anyone experiencing big life changes or transformations such as through adolescence, pregnancy or menopause. Reiki (pronounced 'ray-kee') is an ancient Japanese form of healing. The word means 'universal life force', and during treatment Reiki is channelled into the body. Reiki is an energy healing practice and is undertaken by the placing of the healer's hands in a series of positions over or slightly above the body. Reiki treatment is very gentle yet very powerful and can take place without touching, and can be carried out either on a couch or in the sitting position. Reiki promotes healing by activating the relaxation response and helping the body to balance itself from a very deep level. We also provide crystal healing. Crystals are stones with their own healing vibration. Crystal Therapies are a form of healing treatments using the energy of the crystals to re-balance the body.

Full Recipe Ingredients
2 medium zucchini, shredded
2 medium potatoes, peeled and shredded
1 teaspoon salt (for draining vegetables)
2 large eggs
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese (optional)
½ cup breadcrumbs (regular or panko)
2 cloves garlic, minced
2 green onions, finely sliced
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon black pepper
¼ teaspoon chili flakes (optional)
2 tablespoons chopped fresh parsley
1 tablespoon olive oil & additional olive oil for the muffin pan

Instructions
Step 1: Prepare the Vegetables
Shred the zucchini and potatoes.
Sprinkle with salt and let sit for 10 minutes.
Place in a clean kitchen towel and squeeze out as much liquid as possible.

Note: Removing moisture is the key to crispy muffins.

Step 2: Mix the Batter

In a large bowl combine:

Drained zucchini
Drained potatoes
Eggs
Parmesan
Mozzarella
Breadcrumbs
Garlic
Green onions
Italian seasoning
Paprika
Pepper
Chili flakes
Parsley
Olive oil

Mix until evenly combined.

Step 3: Fill Muffin Pan
Preheat oven to 400°F (200°C).
Grease a 12-cup muffin tin well.
Fill each cup almost to the top.
Press the mixture firmly into each cup.

Step 4: Bake
Bake for 30–35 minutes until:

Deep golden brown
Crispy around the edges
Firm in the center

Cool for 5 minutes before removing.

Step 5: Serve
Serve warm with:
Sour cream
Greek yogurt dip
Marinara sauce
Garlic aioli
Ranch dressing

Spinach and Ricotta Gnocchi

Creamy Spinach and Ricotta Gnocchi

Ingredients:

- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup marinara sauce (optional, for serving)
- Fresh basil leaves for garnish (optional)

Directions:

1. Bring a large pot of salted water to a boil. Add chopped spinach and cook for 1-2 minutes until wilted. Drain and squeeze out excess water. Chop finely.
2. In a large bowl, combine ricotta cheese, flour, Parmesan cheese, egg, salt, and pepper. Mix until a dough forms.
3. Gently fold in the chopped spinach. If the dough is too sticky, add a little more flour.
4. On a floured surface, divide the dough into small portions. Roll each portion into a rope about 1/2 inch thick, then cut into 1-inch pieces.
5. Press each piece lightly with a fork to create ridges.
6. Heat olive oil in a large skillet over medium heat. Add the gnocchi in batches, cooking for 2-3 minutes per side, or until golden brown and cooked through.
7. Serve with marinara sauce and garnish with fresh basil if desired.

Prep Time: 20 minutes, Cooking Time: 15 minutes. Total Time: 35 minutes

WHAT IS REIKI ENERGY?
Reiki energy is understood by practitioners as a universal life force ("Ki") guided by higher wisdom ("Rei") that flows abundantly from a cosmic source through a healer acting as a conduit. To channel this energy, practitioners place their hands gently on or just above specific areas of the recipient's body, standardly targeting the head, front of the torso and back. These precise hand positions correspond to major organs, nerve centers, and energy meridians to effectively clear blocks and balance the body's natural biomagnetic fields. REIKI SHARE is a wonderful opportunity for us to join together to give and receive Reiki to help nurture, heal and support you, as well as others. Hosted by Reiki Master Ursula Bradwell, this practise includes cleansing our energy meridians and Reiki healing.

You can be either seated or lying down, whichever is more relaxing for you – and allow the energy to flow. There is no pressure for you to do anything. You’re welcome to set your intention, the practise is for your own highest good, or for that of others – the choice is yours.
