Having a go at making the coconut Ice cream from the new slimming world magazine out this week which was also part of our Castlecroft group’s raffle prize this week. Top tips don’t let it set / freeze too much before you put it through the food processor which is recommended as if using a stick blender, as I did, wear an apron and be prepared to clean the kitchen and yourself afterwards 😳😂 it’s back in the freezer now ready for pudding tonight to serve with fresh pineapple and other fruits preferably speed fruits 😂
