Creamy Corn Salad with Lime Yogurt Dressing and Sliced Jalapeños Peppers🌽
Ingredients:
For the Salad:
- 4–5 cups cooked corn (you can use canned corn or frozen corn, boiled for 5–7 minutes, drained, and cooled completely)
- 1 red bell pepper, diced
- ½ red onion (or 1 small red onion), finely diced
- ¼ cup fresh cilantro or parsley (or a mix of both), finely chopped
- 1 tbsp Sliced Jalapeños Peppers (more if you prefer extra spicy)
For the Dressing:
- ½ cup Greek yogurt
- 1–2 tbsp mayonnaise
- 1 tbsp olive oil
- Juice of ½ lime
- Zest of 1 lime
- 1 tsp agave syrup or honey
- ½ tsp paprika
- ¼ tsp garlic powder
- Salt and black pepper, to taste
For Serving:
- Nachos or tortilla chips
Instructions:
- In a large bowl, combine the corn, red pepper, cilantro or parsley, jalapeños and red onion.
- In a separate bowl, prepare the dressing by whisking together all the dressing ingredients until smooth and well combined.
- Pour the dressing over the salad and mix well.
Note: Don't worry if the mixture looks a bit like a dip, that's exactly the goal. It should be somewhere between a salad and a dip, making it perfect for scooping up with nachos. If needed, add a little more yogurt to reach your desired consistency.
- Serve with nachos and enjoy!
