We are in Lithuania right now 🇱🇹 and today we’ve been very busy making traditional Lithuanian varškės spurgutės.
And honestly, we had so much fun making them! Especially when you are cooking together with the family, laughing, tasting and trying not to eat them all before they even reach the table. 😂
They turned out so soft, fluffy and absolutely delicious. Golden on the outside and beautiful inside. 😍
So, of course, I have to share a similar recipe with you too, just in case you would like to try them.
Lithuanian cottage cheese spurgutės
✨ 500 g cottage cheese or Lithuanian varškė
✨ 3 eggs
✨ 5 tablespoons sugar
✨ Around 250–300 g plain flour
✨ 1 teaspoon baking soda
✨ A pinch of salt
✨ 1–2 tablespoons vodka
✨ Oil for frying
✨ Icing sugar for serving
Mix the cottage cheese, eggs, sugar and salt.
Add the baking soda, vodka and flour gradually. Don’t add all the flour immediately, because every cottage cheese is a little different. The mixture should be soft but firm enough to form small balls.
Wet or lightly oil your hands, make small balls and carefully place them into the heated oil.
Fry over medium heat until beautifully golden. Don’t make the oil too hot, or they may become dark outside while still uncooked inside.
Place them on a paper towel and sprinkle with icing sugar.
And yes, we add a little vodka because it helps the spurgutės absorb less oil. Don’t worry, the alcohol cooks away during frying. 😊
