Now that we are 4 weeks into a new 'norm' now is a good time reassess our health, nutrition and overall wellbeing. Everyone I coach I ask them to focus on one very simple thing. What is Your health and nutrition goal? As it's different for each of us and it really helps if you focus on one aspect and build from there. Think about how are your feeling and how would you like to feel? Focus on just one health/ nutrition goal and write it down and place it somewhere visible. It's so much easier to take small achieve steps and then it becomes our new norm. Gear up for some easy to make gourmet recipes curated by Chef Karan Mittal
The first of the many to come is this tomato chutney that can be enjoyed as a dip or with flatbread, tortillas and any type of bread.



TOMATO CHUTNEY

200g/7oz vine tomatoes
50g/2oz onions, sliced very thinly
20g/1oz ginger, chopped
20g/1oz garlic, chopped
2-3 cloves (as in the spice, not cloves of garlic)
½ tsp onion seeds
2 bay leaves
½ tsp deggi mirch chilli powder
1 ¼ tsps caster sugar
1 dessertspoon white wine vinegar
2 tbsp oil

Heat the oil in a pan and add the cloves, onion seeds and bay leaves. Let them crackle, then add the onions, garlic and ginger and sauté until the onion becomes translucent. Then add the chilli powder, sugar and tomatoes, some water and cook for a further 10 or 15 minutes. Season & serve.

Spicy Bean & Lentil Stew

This is a really simple stew and can use any type of vegetables (including frozen), beans, and lentils. You can also add meat if you wish, chicken and chorizo work really well. It freezes so it can be cooked in batches. Also given our current situation if someone is feeling unwell can be very nourishing. The chili can be left out and then added when serving depending on your own preference. I hope everyone is doing okay and taking care of yourselves! x Niamh

Ingredients

2/3 carrots

2/3 sticks of celery

1 clover of garlic

1 red onion (any onion will do)

2/3 inch grated ginger

½ cup of dry puy/ green or red lentils (or one tin of lentils)

1 can mixed beans or chickpeas

1 can tomatoes

1 liter or stock or bone broth

1 teaspoon of chili flakes

1 teaspoon of paprika

1 teaspoon of oregano or nori flake

Ground black pepper

Chop the vegetables, garlic, onion and grate the ginger. Saute the onion, garlic, and ginger for 2 /3 minutes then add the spices. If using dry puy/ green lentils either soak the previous night or cook in boiling some water for 30 mins until soft. Add the stock/bone broth then the lentils and cooking water they were in. The red or canned don’t need to be precooked. Then add the can to tomatoes and season with black pepper. Cook for about 45 minutes on a gentle simmer until it’s developing into a thick stew. You may need to add more water as the lentils absorb a lot of water. Then add the can of mixed beans and cook for a further 10/15 minutes. It can be served on its own topped with fresh parsley or coriander or with couscous, rice, brown or crusty bread.

Traditional soda bread is something I think all people associate with Irish food. Have it with smoked salmon, Irish stew, farmhouse cheese and of course a pint of stout! This recipe is wheat free using wholemeal spelt but regular wholemeal flour works perfectly. Also added is milled flaxseed, mixed seeds and wallnuts for added protein. It freezes really well too.
