FOOD SAFETY ALERT: READY-MADE / HOME-MADE DOSA BATTER SAFETY

Recent suspected food poisoning reports remind us that even simple foods like dosa can become unsafe if batter is not handled properly.

🦠🦠Most of us underestimate the impact of beneficial and harmful bacteria, and how strongly they can influence health and the body’s response to food. In vulnerable individuals - especially young children, the elderly, or those with low immunity - severe contamination can become life-threatening🦠🦠

✅ SAFE FERMENTATION TIME
• In warm weather: 8–10 hours
• In cooler weather: 10–12 hours
• Avoid fermenting beyond 12–14 hours at room temperature

✅ AFTER FERMENTATION
• Refrigerate immediately once batter rises well
• Do not leave outside again for long periods

✅ SAFE STORAGE IN FRIDGE
• Best used within 2–3 days
• Can stay up to 4 days only if continuously refrigerated below 5°C

✅ FREEZER STORAGE
• Up to 2 weeks in airtight portions

⚠️ DISCARD BATTER IF YOU NOTICE
• Strong sour / unpleasant smell
• Pink, grey, or unusual discoloration
• Excess water separation with bad odor
• Slimy texture
• Bitter taste

⚠️ IMPORTANT
Cooking kills many bacteria, but some toxins formed in spoiled food may survive heat.

✅ ALWAYS
• Use clean spoons
• Avoid mixing the batter after grinding while wearing bangles or religious threads or wearing nail polish - as these harbor harmful bacteria
• Close lid tightly
• Avoid dipping wet hands into batter
• Refrigerate immediately after use

Discalimer:

The 3-month-old infant and 4-year-old child reportedly died during treatment in this suspected food poisoning incident. As the infant may also have been breastfed after the mother consumed the meal, the exact cause remains under investigation.

One of my first nutrition stories from around 2020 - revamped into a post today ☺️

If you’re not adding ragi in some form daily, you’re missing out.
And yes, if that means cutting down one mug of Horlicks or one cup of coffee/tea - do it.

Because that small swap makes a far bigger difference to your health than that extra caffeinated drink ever will.

Your body will thank you - bones, gut, sugar levels, everything.

Fermented version - Make Ragi overnight, keep it aside and next day mrng add other ingredients.

Every year around December end and January beginning, I get a lot of enquiries asking to start programs or challenges on Jan 1st.
Today someone asked me,
'Why start late? Are you not missing out by not starting on Jan 1?'

And the honest answer is: Yes, I probably am.
I miss out on clients, money, and opportunities - every single year!

But here’s the thing 👇
While many coaches rush to launch, post nonstop, and gear up for January 1st, I choose to move differently.
I deeply believe in the ART of SLOWING DOWN.

If I have to start on Jan 1st, I need to prepare in December, open sign-ups early, stay constantly available and that leaves very little time for me.
And I’m no longer willing to build something that costs me my peace.

We have been conditioned to believe that doing things with the crowd is the only way to succeed.
But growth doesn’t have one calendar date.
Even if slowing down means losing money, clients, or 'perfect timing' - it’s okay.
Because sustainable work, meaningful impact and long-term health come from moving at your own pace, not the world’s pace.

So if your January 1st didn't go as planned or you had planned 10k steps a day but got sick instead or you are travelling or you wanted to start fasting but ended up entertaining people where you are forced to eat more than you planned - ideally all your new year resolutions are stuck!

You just have to start when you’re ready 🫶
