One of the biggest misconceptions I hear is: "Khichdi is so simple… you just throw rice and lentils into a pot."

I wish it were that simple.

In Ayurveda, khichdi isn't considered healing because of the ingredients alone. It's healing because of how it's prepared.

Two people can use exactly the same rice, the same lentils, and the same vegetables—yet one bowl nourishes the body while the other leaves someone feeling heavy, bloated, or tired.

The difference is often found in the small details:

- Did you soak the grains first?
- Did you choose spices that support your digestion?
- Did you overcook the vegetables—or cook them separately to preserve their nutrients?
- Is the khichdi soft and easy to digest, or thick and dry?
- Did you finish it with a spoon of ghee?
- And perhaps the most forgotten step of all… how did you eat it?

Ayurveda reminds us that digestion doesn't begin in the stomach. It begins with the way we prepare our food, the attention we give it, and the way we eat it.

I often tell my patients that good digestion isn't about finding the perfect superfood. It's about making everyday food easier for your body to receive.

That's exactly why I created this guide. Because sometimes, changing how you cook your khichdi can make a far bigger difference than changing the ingredients themselves.

One thing I’ve always found beautiful about our traditional way of eating is how gently babies are introduced to food.

In many Indian homes, babies don’t start with a bowl of dal. They begin with dal ka paani—the water from cooked lentils, sometimes with just a pinch of cumin and, in some families, a little salt. The digestive system is allowed to get used to it first. Only then do we slowly move on to the whole lentils.

Ayurveda has always taught us this: don’t rush the body. Introduce foods gradually and let digestion adapt.

Somewhere along the way, we forget this as adults.

People suddenly start eating wheat again after years of avoiding it. Or they decide to eat lentils every day because they’re “healthy.” Then they end up with gas, bloating, constipation, or heaviness and conclude, “Lentils don’t suit me.”

Not always.

I remember one patient who told me, “Khichdi gives me so much gas.”

I asked her to bring the khichdi she was eating.

The moment I opened the container, I knew why. The lentils were still firm, the rice wasn’t cooked properly, and there were barely any digestive spices. It wasn’t the khichdi causing the problem—it was the way it had been cooked.

Sometimes it’s not the food. It’s the preparation. Sometimes it’s not the ingredient. It’s the timing. And sometimes, the body simply needs a gentler introduction.

That’s exactly why I started this Khichdi Series.

We’ll talk about which lentils suit whom, polished vs. unpolished, how to cook them so they’re actually digestible, and the food, lifestyle, and herbs that support healthy digestion.
