Keto Coconut Chicken Curry in a hurry
This curry makes an easy dinner or lunch as most of the ingredients are pre made. All you need to do is open a bottle of good quality Thai red curry paste and a can of coconut cream. So lets get rolling!!!!

Ingredients
500 gm of boneless chicken thigh
5 small shallots
1 tsp ground ginger
1 tsp ground garlic
4 heaped Spoons Thai red curry paste
1tbsp Fish sauce
1 can of coconut cream
1tbsp Coconut oil
3 cups of chopped Spinach
Salt to taste
Directions
1. In a pan of heated oil, add Shallots, finely minced ginger, garlic and salt. Cook the aromatics till the raw flavour goes away. In a separate pan sear the chicken until its brown on the outside.
2. Add red curry paste to the aromatics and saute for a minute or two. Add the chicken and 1/2 cup water for the chicken to cook well. Once the chicken is almost done, add coconut cream(discard the liquid from the can and add only the cream) and spinach. Simmer it for few minutes. Add your coconut chicken curry in a jiffy is ready!!!!

Keto Eel curry
Eels can be a hard sell and might need a little bit of persuasion to be served as a main course dish. But if made the right way it can be a delectable and mouth watering dish. Eel has a lot of nutritional benefits which really makes it all the more appetising. I have used fresh water eel in the curry but this dish can be made with any eel you like.
Ingredients
1/2 kg of Freshwater eel (cleaned)
1tsp of ginger garlic paste
2 Green chillies
1 Medium size onion (chopped)
4 whole dried red chilli
1tbsp of whole coriander seeds
1 tsp of Cumin seeds
1 small tomato
1tbsp tamarind paste or Red wine vinegar
A sprig Curry leaves
Coriander leaves for garnish
Directions
1.Dry roast cumin, coriander and red chilli till its fragrant and grind it into fine powder.
2. Add any oil of your choice, saute onions, green chillies and curry leaves till the onions are caramelized. Add ginger garlic paste, tomato and the roasted spices powder. Let it cook it everything turns into a smooth homogenous mixture.
3 Add the freshwater eel and coat it well with the spices. Add tamarind paste. (Tamarind can be high in carbs, so use your discretion while using tamarind paste. If you want to eliminate it completely, substitute it with some good quality red wine vinegar)
4 Add a splash of water, let the curry cook for 10 minutes. Garnish with coriander leaves. Serve hot with cauliflower rice and a side of sautéed swiss chard.

This is my almond flour keto bread. A big shout to .connect for the wonderful recipe. I just blindly followed the recipe. Its so good.Thankyou for such easy recipe. I had to make my own almond flour from scratch because in India almond flour is mightily expensive. Or you can say I am poor. Lol. I just loved it and I am really excited now to make some good sandwiches. Great recipe!!!

Keto Vietnamese Chicken Salad
Hot, crunchy, crispy, tangy, sweet, lemony. You name the flavour and texture and you have it in this salad. This salad is bursting with Umami flavours without the carbs . It is such a great stand alone dish in itself but you can serve it as a side dish too. The key to this salad is the crunch. Generally a lot of Thai and Vietnamese salads use roasted ground rice for crunch. I have added my own twist to it by adding a lot of crushed toasted almonds and sesame seeds. The salad dressing here is a real flavour bomb. It just takes the salad to the next level. So here is the recipe:-

Ingredients
1 cup of Shredded cooked chicken
2 cups romaine lettuce (roughly chopped)
1 cup Arugula leaves (roughly chopped)
1 red chilli, chopped finely (optional)
1 Asian shallot (spring onion can be a great substitute)
1/2 carrot thinly sliced
1/4th Cup mint leaves, roughly chopped
1/4th Cup of toasted almonds, crushed
1tbsp of toasted sesame seeds
Few sprigs of coriander

For the salad dressing:-
3 tbsp of Fish sauce
3 tbsp of Lime juice
1tbsp of erythritol or few drops of stevia
1/4th tsp of red chillies chopped
Sesame seeds for garnishing
Instructions
1. Toss the chicken, lettuce, arugula, chilli and coriander leaves in a large bowl.
2 In a small bowl, whisk all the ingredients of salad dressing.
3. Pour the dressing over the salad and toss well to coat.
4. Fold in the Almonds, sesame seeds and mint leaves. Serve at room temperature or slightly chilled.
Notes
1. I poached my chicken with bones in water but you can use chicken broth to do it. Do not use chicken breast for this recipe as the chicken might dry out during the cooking process. Also when we poach chicken with bone, the connective tissues help the chicken remain softer. It is also cheaper to use chicken with bone rather than chicken breasts. Once cooked use a fork to remove the meat from the bones and discard the bones.
2. Using coriander leaves and mint leaves is non negotiable. Do not skip it!!! It imparts a herbaceous flavour to the salad which is the essence of Vietnamese cooking.

Keto Strawberry Bellini
Well its true that keto and alcohol are not good friends. But what do you do when you want a drink?? You make yourself a non alcoholic version of strawberry bellini. This makes a perfect elegant drink for entertaining your guests. So brighten up your day with this colourful drink. I know I must be raising many eyebrows about the amount of carbs in this drink. But each serving is almost under 5gm net carbs. So go ahead and follow the instructions to make you party a little more colorful!!!!

Ingredients
1/2 a cup of Strawberry
1 tbsp of Erythritol
A pinch of pink salt
A sprig of mint leaves ( finely chopped)
Sparkling water

Directions
Use a blender to smoothly blend strawberries, erythritol, salt. Add chopped mint leaves. Pour the blended mixture in a glass and top it up with sparkling water. Enjoy your drink!!!!

Keto Chicken Dumpling soup

The struggle of winter is real and having a bowl of soup for dinner is so warm and comforting. My chicken dumpling soup is like a big warm hug in a bowl. Little dumplings of soft juicy chicken along with the "mirepiox" of carrot, celery and onions makes the best dinner on a cold night. You can add whatever veggies you like to jazz up the soup. So here is the recipe!!!!

Ingredients
350gms boneless chicken thigh
1 big onion
1 Medium sized carrot
2 stalks of celery
1/2 head of broccoli
Handful of green beans
100gms Spring Onion
1/2 tsp Ginger
1tbsp of Flat leaf parsley or Coriander
Salt to taste
1/2 tsp Pepper
1/2 litre Chicken Stock or bone broth
1tbsp Exta Virgin Olive oil

Directions
For the chicken dumpling, take chicken thighs and put in the food processor and mince it finely. I insist that for this recipe, do not buy chicken mince but rather mince it fresh because there is no binding agent that would hold the mixture together. So it's important that the chicken is finely minced in the food processor. Add ginger, salt, finely chopped spring onion and parsley. Make the mixture into small round balls and place it in the refrigerator for at least 15 minutes to chill.
Next heat extra virgin olive oil in a pan and add chopped carrots, celery and onions. Let it cook on low heat for a long time. The intention is to sweeten the vegetables rather than caramelise them. Basically it's a mirepoix which serves an aromatic base for the soup. Once done, add broccoli, beans and Chicken stock. Let it come to a boil. Add the chicken dumplings gently into the pan. Add salt and pepper. Cook the soup till the chicken is cooked and serve hot. You're welcome!!!!!!!

For those who don't know, I stay in India and its really hard to get keto friendly food in restaurants. Although we have all major fast food brands here but none of them serve bunless burgers or keto friendly food. Neither do Starbucks in India serve keto friendly drinks. But don't lose heart!!! If you are smart and observant enough, you can find something that is keto friendly. Today I got spicy grilled chicken wings from Burger King. Super delicious and so keto friendly. I also managed to make myself a bulletproof coffee at IKEA with some butter and shots of espresso. So all my friends in India, if you find any great keto fast food please tag me.

Keto Indian Style Beef Stew in Coconut Milk

This is an aromatic and delicate stew which is mildly spiced. Its is a hearty meal in itself. You can have just as it is or with some keto bread to mop up the gravy. The key to cook this recipe is Patience!!! You have to slow cook it for a long time. As it slow cooks, the beef, coconut milk and the vegetables comes together in cozy harmony to become the best comfort food on a cold night.

Ingredients
500gms of Beef cubes (with or without bone)
1 medium onion sliced
1 tbsp of Ghee
1tbsp of ginger and garlic, minced
1 tsp of Tomato paste
1tbsp Sour Cream
1 Can Coconut milk
Whole spices:-
1 stick of Cinnamon
2 Cardamom pods
4 Cloves
2 Bay leaves
2 Star anise (don't skip it, it gives the unique aroma to the stew)
Powdered Spice
1/2tsp Turmeric powder
1tsp Cumin powder
1tsp Coriander Powder
1tsp of ground Almonds

Vegetables :-
1 Medium sized Radish
2 Stalks of Celery
1/2 medium size Carrot
2 Bell peppers
Coriander leaves for garnishing
Directions
In a heavy bottom pan, add ghee. Sear the meat in batches. In the same pan, add all the whole spices, onions, ginger and garlic. Let the onions caramelise till its golden brown. Add tomato paste, powdered spices and sour cream. Cook it till the ghee separates from the mixture. Add beef and thin extract of coconut milk. At this point you can also add water to help the beef cook well. Simmer and let it cook for 45 mins or till the beef is tender. Add the all the veggies and cook for another 10 mins. Finally add the thick coconut cream or first extract and mix it well. Garnish with coriander leaves.
(If you are using canned coconut milk, then keep it in the refrigerator 15 mins before you start cooking, you will notice that the cream comes on top and the water remains at the bottom. Scoop the cream from top and reserve it to put it at last in stew. I have used fresh coconut milk in this recipe. )

The Best Bullet Proof Hot Chocolate
Its a cold and rainy day in Hyderabad and all I need now is a rich, creamy, decadent Hot chocolate to warm my soul. I have add only four ingredients to this drink but you can explore and add anything you like. If you are feeling fancy, you can add whipped cream on top.

Ingredients
10gms Butter
1 tsp Erythritol
1tbsp Mct oil
10gms Dark Chocolate (sugar free)

Directions:-
Bring 3/4th cup of water to a simmer in a medium saucepan or microwave for one and half minutes. In a cylinder of a hand blender, add 10gms of butter, 1 table spoon of MCT oil, 1tsp of erythritol and 10gms of good quality sugar free dark chocolate (I have used Lindt 99% Cacao). Add the hot water and blend the mixture till its frothy. Add some chocolate shavings on top. There you have it, the perfect drink for a cold weather treat!!!!!!!
