My daughter was born peak covid - May 2020 🦠
She very likely had covid when she was 25 days old, because I had a fever spike 🫣
I worried. I worried a lot about her immunity…
But then, I turned that worry into ACTION
I told myself, I cannot control the environment, I can control what I give her to improve her immunity
So, I breastfed her. I didn’t give up even when the entire world around me told me to just give her formula. I bent backwards to make sure I BREASTFED her.
Next, when she started weaning, I made sure she enjoyed her meals, understood her hunger and was self fed.
Gave her well balanced meals with adequate protein, good fats and complex carbs.
When she turned three, I started giving her kalonji seeds + honey first thing in the morning on an empty stomach followed by 1 tsp of Amlaprash.
When she turned 4, started giving her moringa + amla + saffron concoction once in 2 weeks and now she has it twice a week.
I make a batch of Moringa leaves and Amla, juice it, and store it in an ice tray. While giving it, I put few saffron strands in a bowl and add one ice cube (of the juice mixture) to the bowl. I let the saffron bloom as the cube defrosts itself.

That’s quite our routine. Nooriyah enjoys her coconut water post her play group while mommy relishes the coconut flesh! I’m not a breakfast person, so this is my first food and next is an early lunch.

MINCE PIE!
This is literally one pan recipe! Easy peesy lemon squeezy!!
Ingredients:
Mutton mince: 750 gm
Bread : 6 slices
Potatoes: 4 large size
Eggs: 6 no
Coriander- handful (finely chopped)
Mint - handful ( finely chopped)
Ginger- 11/2 tbsp
Green chilly paste - 1 tbsp ( as per spice level)
Salt - as per taste.

Instructions:

1)Marinate the mince with ginger, green chilly paste, coriander, mint and salt.
2)Slice and sauté the potatoes in a flat pan. Once cooked thoroughly, mash it completely and add it to the mince.
3)Dip the bread slices in water, squeeze out the water and add it to the mince.
4)Add 4 beaten eggs to the mince and now mix everything well.
5)Flatten and spread the mixture on the flat nonstick pan and add two beaten eggs ( add salt + red chilly powder to this beaten egg mixture ) on the top layer.
6) Pour 1 tbsp of melted ghee on the beaten eggs.
Cover and cook for 30-40 mins. Slice it and serve hot!
7)Squeeze some lime before serving!

HIGH PROTEIN CHAAS!
This is no ordinary chaas!
The secret ingredient here is : Whey water.
What is whey water?
Whey water is the liquid that separates from milk while preparing paneer(cottage cheese)/cheese.
Whey is the protein fraction.
This makes the water protein rich, containing all of the essential amino acids.
In addition, it is easy to digest and absorbed from the gut quickly compared to other types of proteins!
These qualities make it ideal for consumption and thereby enhancing the nutritional value of any recipe! Also, it doesn't really have any flavour so doesn’t alter the taste when added to different recipes!
In the previous recipe, I mentioned about utilizing your whey water instead of throwing it. Here are ways you can incorporate whey water:
1) Chaas (buttermilk)
2) Make lemonade/gingerale/aam panna.
3) Add it to upma in replacement of water.
4) Add it to Dals/curries/or any sabzi while cooking. Replace water with whey water.
5) Add it to the dough while making rotis
6) Cook rice in whey water and don't discard the water.
Moral of the story: You can add whey water as a replacement for water in any recipe! In return, you get a dish richer in protein!
