A must in our daily meal specially in a vegetarian dietary pattern.Important source of protein, fibre and essential micronutrients that perfectly complement with the cereal carbohydrates in our Indian diet and bring about a balance in essential amino acids. A few pointers often missed out when we talk about pulses...

Pre soaking them is a must to help eliminate the antinutrients like phytates .

Sprouting the whole pulses/ legumes increases their micronutrient levels and enhances their digestibility.

And yes... variety is indeed a spice of life... include different varieties of pulses and legumes in the meals since every pulse has its individual amino acid profile.

For people with digestive issues ( bloating, indigestion etc ) use heeng , ginger , ajwain ka tadka in your pulses instead of omitting it altogether.
