About

The Wilson’s Dunedin Distillery, also known as Willowbank Distillery, was established in 1974 on the South Island of New Zealand by the Baker family. It was the southerly distillery in the world, producing highly regarded Milford and Lammerlaw Whisky brands.

The distillery closed in 1997. The remaining stock is now owned by The New Zealand Whisky Company that stores it in a seaside warehouse in Oamaru and gradually releases it.

We started Thomson Whisky the same way you’d start a band. We got together and just started tinkering. It was never about taking over the world, or playing Wembley, but about giving it a go, creating the best spirit we could afford to and sharing our journey with anyone who liked whisky. We wanted to give New Zealanders a whisky they could be proud of, with a sharp brand on top. Our bottlings reflect who we are, because we’re small enough to do it how we like it. As we grow these qualities remain.

A few years down the road and things have changed a lot. With a new distillery in operation we now blend whiskies and distill single malt. Using a hand-beaten copper pot still, just three ingredients form the basis of the whisky we distill; quality malted barley, pure water, yeast. Aged in a range of casks including ex-bourbon barrels, NZ red wine casks and some miniatures, our whiskies are growing handsome with age.

By traditional methods for contemporary ends – it’s all about a passion for the spirit, creativity, and respect for the process.

New Zealand whisky evangelists and winemakers Warren and Deb Preston identified Oamaru’s historic Harbour Precinct as an ideal seaside climate for whisky maturation. Next, they did something profound. They decanted over 200 barrels of Dunedin distilled single grain whisky out of American bourbon barrels and into French oak NZ wine barrels. The Dunedin DoubleWood was born. Eight years on, The New Zealand Whisky Collection is proud to present The Oamaruvian – specially selected casks chosen for their rich toffee, floral nose and creaming soda mouth-feel with a hint of Oamaru sea spray to finish.

Avery rare collection of Milford Single Malt Whisky from New Zealand. These whiskies form part of a discontinued range that were the first whiskies released after the closure of Willowbank Distillery.

Climate, Geography, Geology very similar to Scotland also a lot of Scots emigrated there.

An ideal place for making whisky it is a shame they demolished the Willowbank distillery due to a down turn in the world economy.

The distillery was latterly owned by Seagram (1980s) who produced the New Zealand single malt that was originally sold under the “Lammerlaw” brand.

Lammerlaw was discontinued when Seagram sold the stocks and the Willowbank Distillery in 1997 to Australian brewer Fosters, only for Fosters to mothball operations and send the stills to Finish.

Lammerlaw was discontinued when Seagram sold the stocks and the Willowbank Distillery in 1997 to Australian brewer Fosters, only for Fosters to mothball operations and send the stills to Fiji for making rum.

The distillery has over the years several names Dunedin Lammerlaw, or Willowbank distillery.  Closed in 1997, the distilling equipment has since been dismantled.

The New Zealand Single Malt Whisky Company in 2010 secured the remaining single malt stocks, 80,000 litres in 443 barrels from what had previously been stored in an old airplane hangar. The whisky now resides in a bonds store in Oamaru.

The Milford Brand was created to showcase this fine, limited edition, single malt.

Milford Single Malt is similar in style to the Lowland malts of Scotland, lighter in body and aroma than the malts of the highlands – elegant with a delicate nose, soft citrus in flavour and a very smooth finish.

A rare discontinued bottling of 45 South New Zealand Whisky which along with Wilson’s was marketed by the Baker family.

The Baker family opened the Willowbank Distillery in 1974 in Dunedin. The Distillery was sold to Seagrams in the 1980’s and then to Fosters in 1997, who closed the Distillery and sent the Stills to Fiji for rum production.

Bain's Cape Mountain is a brand of whisky distilled at the James Sedgwick distillery in Wellington, Western Cape, South Africa. Launched in 2009, Bain's is South Africa's first whisky produced from a single grain, being made from 100% yellow maize (corn). Bain's is owned by Distell, a multinational brewing and beverage company based in Stellenbosch, South Africa. Bain's is named after Andrew Geddes Bain, who built the Bainskloof Pass that connects the town of Wellington, where the distillery is located, to the interior of the country in 1853.

Andy Watts is currently the Master Distiller, only the 6th since the distillery was established in 1886. Bain's was named the World’s Best Grain Whisky at the annual Whisky Magazine’s World Whisky Awards (WWA) held in London in 2013
