Cultivar: short for “cultivated variety.”

Every matcha comes from one species. A cultivar is one specific version of that plant, chosen by a human for a trait worth keeping, then copied from cuttings — so every bush in the field is genetically identical to one original mother plant.

Not a type. A copy.

Some are found in a field by a farmer. Some are bred at a research station over twenty years. Both end up on the tin, and both change what’s in your bowl.
