We are pleased to invite you to a special seminar by Prof. Aya Kimura (University of Hawaiʻi at Mānoa).
Fermenting for the Future: Japanese Pickles and Microbial Foodways
Traditional Japanese pickles (tsukemono) once encompassed hundreds of diverse varieties, many of which have declined due to industrial food processing and reduced agricultural biodiversity. In this seminar, Prof. Kimura will explore how changes in food and agriculture have transformed relationships among people, plants, land, and microbial ecosystems, highlighting the implications for both human and environmental health.
