Masterchef Asia S1’s first runner-up and dessert maestro Marcus Low is set to host MadHatter Desserts: A Mad Picnic at Psychotic Operator Wine Space on 11 and 12 July.

Collaborating with homegrown brands like Raksasa Spirits and Chocolate Concierge, Low will showcase nostalgic Chinese-inspired dessert using French techniques and Malaysian flavours.

His Pineapple Beneath the Looking Glass captivates with a pineapple-shaped chocolate shell of Raksasa gula Melaka rum baba with mascarpone mousse, spiced pineapple compote and gula Melaka rum 'snow'.

Savoury chicken biscuit crumbs evoke nostalgic vibes in the Rather Peculiar Biscuit consisting of decadent dark rye brownie and chocolate mousse complemented by roasted peanut skin ice cream.

A whimsical Teapot Cake competes for attention thanks to its exquisite combination of oolong tea mousse and jelly, passionfruit curd and tea biscuit crumble.

No less astonishing is Porcelain Illusion, Low’s crafty dessert of white chocolate, coconut mousseline and peanut génoise; painstakingly transformed into retro Chinese bowls adorned with the iconic rooster motif bearing peanut-filled tang yuan (glutinous rice balls).

The chef’s Marry Me Cake melds traditional ‘lou po beng’ (Wife Cake) and ‘lou kung beng’ (Husband Cake). The resulting flaky, buttery puff pastry flaunts a distinct filling of fermented red beancurd and roasted peanuts paste sprinkled with toasted sesame seeds.

Other notable offerings include Sambal Tempoyak Buns, The Curious Orchard (buttery pâte brisée tart with apple-kedondong compote and local lime) and feather-light, crisp Palmiers.

His classics: Matcha Pistachio Passionfruit, Chocolate & Calamansi Cake, The Queen’s Victoria (sponge with berry compote, fresh cream and port-macerated locally grown berries) and Raspberry Rose Lychee Cake need no introduction for long-time Mad Hatter fans.

Meat & Livestock Australia (MLA) hosted an Australian Beef & Lamb Masterclass titled “Nutrition that Powers Wellbeing” for local dieticians and nutritionists recently.

Aussie master butcher Gary Hine touched on the farmers’ involvement and sustainable practices then showed how he portioned different cuts of beef and lamb. Then three guest chefs demonstrated easy recipes for attendees.

Family Feast (RM98) at Ippudo-Maisen is surprisingly good value for money as the various items are enough for 2-3 people.

The salad is fresh and fruity, whetting the appetite before the omelette sando. A choice of rice don (different protein choices) and ramen (again variations available) form the main meal. Also included are skewers of chicken with leek, okra and eringi mushrooms. Can add RM5 for a glass of green tea and a serving of soft serve 🍦.
