We’ve been through the recipe archives and have decided this rich, creamy mushroom sauce with perfectly cooked steak is the ideal weekend dinner. Every time we post this recipe, people rave about it so here’s your cue to get into the kitchen and create something delicious 👨🏻‍🍳

Mushroom sauce:

Ingredients:
25g grass fed butter
1/2 brown onion finely diced
2 garlic cloves crushed into a paste
1T olive oil
300g flat mushrooms
1/4c white wine
1/2 pouch of The Little Bone Broth Company Beef Broth
300ml cream
1/2 grated parmesan cheese
Salt and pepper

Method:
Heat butter in a large saucepan over a medium heat. Add onions and garlic and cook until translucent. Add olive oil and mushrooms. Cook until they are lightly browned and have reduced slightly in size. Add wine and bone broth to the mushrooms and cook until most of the liquid has reduced. Lower the heat and add the cream, parmesan, salt and pepper. Cook for another 5-10 minutes until the sauce has thickened to the desired consistency. Make sure to stir occasionally and ensure it doesn’t overboil as the cream will split. Enjoy!

Beef lasagna recipe using our beef stock pots - how good does this look?! The perfect dinner on these chilly winter nights🔥

Lasagne
SERVES: 8-10 PREP TIME: 20 mins
COOKING TIME: 3 1/2 hours

INGREDIENTS
Sauce
1T olive oil �1 onion�1 carrot, peeled and finely diced
1 celery stick, finely diced
2 garlic cloves, finely chopped �1kg beef mince
2 400g tins chopped tomato
75g tomato paste
2 The Little Bone Broth Beef Stock pots
2 bay leaves
1/2t each dried thyme and oregano
Salt and pepper to taste

Cheese Sauce
60g butter
70g flour
1l milk
200g Colby or cheddar cheese
Pinch of ground nutmeg
Salt and pepper

Lasagne�500g fresh lasagne sheets �150 g mozzarella cheese

METHOD
1. Heat the oil in a large heavy based saucepan over a medium heat. Add garlic, onion, celery and carrots. Cook for 10 minutes until softened.
2. Increase the heat and add the mince to the pan, cooking until browned.
3. Add the remaining sauce ingredients and stir to combine.
4. Bring to a low simmer then cover with a lid and cook for 1 1/2 hours, stirring occasionally.
5. Remove the lid and cook for another 30 minutes to reduce the sauce.
6. In a large saucepan, melt butter over medium-low heat. Add flour and stir constantly for 1 minute.
7. Add 1 cup of the milk, stirring constantly. Once mostly lump free, add remaining milk and whisk until smooth.
8. Increase heat to medium high. Stir often until sauce thickens. It should coat the back of a wooden spoon.
9. Remove from heat and add cheese, nutmeg, salt and pepper. Mix until the cheese is melted.
10. Preheat oven to 180°C.
11. Pour a little sauce over the base ( just enough to cover it) of a 33 x 22cm baking dish then cover with lasagna sheets. Tear sheets to fit.
12. Pour 2 1/2c of sauce over the sheets then follow with 1c of the cheese sauce.
13. Top with more lasagne sheets. Spread another 2 1/2c of sauce over the sheets, then 1c of the cheese sauce.
14. Top with lasagna sheets then repeat 1 more time.
15. Top with a final layer of lasagne sheets, then pour over the remaining Cheese Sauce.
16. Sprinkle with Mozzarella, then bake for 25-30 minutes or until golden.
17. Allow to cool for 5 to 10 minutes before serving.

Kaffir Lime and Coconut Chicken Drumsticks
⠀⠀
1T coconut oil
6-8 chicken drumsticks
Salt
1 can of full fat coconut milk
1 pouch of The Little Bone Broth Company Chicken Broth
2 spring onions chopped
8 kaffir lime leaves shredded
1T coriander shredded
2cm piece of ginger finely grated
2 garlic cloves finely grated
1T fish sauce
Juice of 1 lime
1t chilli flakes
1T corn flour mixed with 1/4c cold water
More spring onion and dried chilli for serving

Method:
-Preheat the oven to 200 degrees
-Season the chicken drumsticks with salt and melt the coconut oil in a large skillet over a high heat.
-Cook the chicken until browned on the outside and remove from the skillet.
-Add remaining ingredients to the skillet and mix thoroughly. Leave to simmer for 5 minutes on a medium heat.
-Add the chicken back into the skillet and place in the oven for 40 minutes turning the chicken half way through.
-Serve with steamed beans and rice.

Note: if you do not have a skillet, this can be made using a large frying pan on the stove and baking dish in the oven.

The faces behind The Little Bone Broth Company brand 🤩

Alex (the bone broth mastermind & chief operator), his wife Cat (a registered nurse) and two kiddos Matilda & Jackson.

Growing a business with young children while both working (in and out) of the business is hard yakka but so worth it. We are 8 years in, it’s been extremely challenging and extremely rewarding - the highs and lows have been a ride at times but it’s all part of the process. We have some exciting plans in the wings and are so stoked with how our business is going - thanks to all of YOU for buying our products and a big thanks to our awesome staff who work so hard for us behind the scenes 🙌🏻

So a big hello to new followers and old faces too. Thanks for following along and supporting us as always 😊

Bone broth - a versatile, delicious and nutrient filled base for sipping, adding to soups/stews, risotto, sauces, curries….the options are endless (well, nearly!).

Our personal favourites are using as a gravy or jus, in a curry or sipping on a warm cup for a mid afternoon snack. An added nutrient boost that tastes amazing in whatever form you choose to use it ⚡️
