Cacao Truffles 🤎

Four ingredients, one saucepan – so simple!

Our 100% Cacao Paste is stone-ground from Pacific beans, and these simple truffles let the flavour and Pacific connection truly shine. Equally delicious and nutritious – keep a batch on hand for afternoon boosts and a new daily ritual. 

INGREDIENTS 🥛 (makes roughly 12 truffles)

180 g 100% Cacao Paste, finely chopped
180 ml milk (dairy or plant-based)
4 Tbsp honey (or agave syrup)
4 Tbsp Cacao Powder, sieved 

METHOD 👩‍🍳

1. Add the Cacao Paste, milk and honey to a medium-sized saucepan and heat until almost boiling. Whisk together until totally smooth.

2. Pour the mixture into a bowl, cover, and refrigerate for at least 3 hours.

3. Scoop out 1 tablespoon at a time of your chilled mixture. Roll into balls (with clean hands!) and then roll the balls in cocoa powder. 

4. Put all your truffles on a plate (or in tupperware) and chill again until ready to serve.

This paste is made from activated cacao nibs, crafted by the Women of the Solomon Islands, infused with medicinal quantities of activated Maca powder (only the best from Peru), and formed into a potent powerful cacao paste for daily ceremony and upliftment.

There's something about seeing cacao in its natural environment that moves us deeply. 🌿🍫

We're delighted to share these beautiful photos by our friend Luke Owen Smith – taken during our trip to Papua New Guinea in April – where Jeff, Mark, Oonagh and the team spent time in cacao-growing communities across the East Sepik region.

Cacao is such a magical fruit. The colours, the shapes, the extraordinary range of flavours hiding inside each pod. And behind every one of those pods, a farmer and a community with a story worth knowing.

Spending time at the source – amongst the trees, the people and the culture – is a reminder of why we do what we do. Cacao is not just an ingredient. It's a connection. 🤎

There's a reason so many people make cacao their daily ritual. ☕️

Cacao occupies its own category. No coffee jitters; no overly sweet hot chocolate instead, something grounding, steady, and genuinely nourishing.

Pure Pacific cacao contains theobromine rather than high levels of caffeine, which means the energy it gives you doesn't spike and crash. Most people notice clearer thinking, lifted mood, and a kind of calm focus that carries through the morning. 🤎

30g a day is a good place to start. Some people work up to 50g. Whisked into hot water, maybe a little honey – that's all it takes.

The ritual matters too. Taking five minutes to calmly make a cup; hold it, drink it slowly – that moment becomes the centre of your day.

Rich, thick, and highly decadent Pacific hot chocolate! 🍫

Here's what you need – makes two small cups for slow sipping ☕

400ml coconut milk
30g of our 100% cacao paste, roughly chopped
One PNG vanilla pod – sliced in half and scraped for the delicious insides
Two generous tablespoons of honey – we love Peter Gordon Niue Honey Company
Dark chocolate to garnish 

Method 🤎

1. Add all the ingredients to a pan and heat gently, stirring as the cacao melts in. 

2. Bring just to the boil and whisk until fully combined and smooth. 

3. Serve in small cups and finish with a grating of dark chocolate – we love Tasmanian Chocolate Makers PNG 70% for the full Pacific loop. 🌏

Mark and Jeff's PNG Adventures 🌍🍫

In April, we packed our bags and joined Oonagh and a group of 15 international chocolate makers and cacao experts for two unforgettable weeks in Papua New Guinea.

Before the main group even arrived, we were already hard at work – travelling to local cacao growing communities to run "local Milo" hot chocolate making workshops, showing farmers how to turn the cacao growing right outside their door into something delicious, using ingredients they already have to hand. 🍫

Then it was on to the main event: the Greater Sepik Cocoa of Excellence and Trade Expo in Wewak – a celebration of PNG's extraordinary cacao and the incredible communities who grow it.

Jeff and Oonagh took on the serious business of judging the Cocoa of Excellence Awards, tasting cacao samples from the country's top 59 farms alongside an international panel. Mark, meanwhile, helped facilitate the entire judging process – no small task with that many samples and that much at stake!

We also ran a local Milo demo at the expo's hot chocolate competition, sharing the knowledge and technique with around 20 local entrants from villages across East Sepik, before the judging began.

And of course, there was an adventure or two along the way – including a four-hour drive on roads that turned into rivers after a tropical downpour, with Mark rolling up his sleeves to pull a very stuck vehicle out of the mud. 😅

From remote village visits with incredible welcomes, song and dance, to being part of a moment that PNG cacao farmers and the international chocolate world will be talking about for years to come – this was a trip we will never forget.

Pacific cacao. Pacific connections. This is what it's all about. 🌿
