19.1kg lost in 5 months

"The program has made me feel really good. I'm walking faster and easier, and people are always making positive comments about how I'm looking and how well I'm doing.

Over the last 25 years I've tried different weight loss programs and food plans. I would always set what I thought was a realistic goal and I'd get close, but I never quite got there.

When I started Healthy Inspirations, I set myself a realistic but hopeful goal of losing 16kg.

The amazing thing is that I've not only reached that goal, I've gone beyond it.

In just 5 months I've lost 19.1kg.

I'm now back to a weight I haven't been at for around 15 years, which feels incredible.

When I think about what I've lost, I compare it to 38 packets of butter. When you actually picture that amount, it really puts it into perspective.

The support, encouragement and accountability have made such a difference. For the first time in a very long time I've achieved more than the goal I set for myself.

I feel better, I move better, and I'm so proud of what I've achieved.

Healthy Inspirations Coconut Fish Soup – On Plan and So Satisfying

Ingredients
600gm white fish, cut into 5cm pieces
Salt to taste
Juice from 2 limes
2 Tbsp coconut oil
6 cloves garlic, finely minced
1 chilli, finely minced
1 onion, finely chopped
2 red capsicum, thinly sliced
2 tomatoes, cored and chopped
1 cup fish stock
400ml coconut milk
Coriander, finely chopped

Method
In a large bowl, season the fish with salt and pour the lime juice over, toss, and set aside.
Heat oil in a large pan over medium heat. Add garlic, chilli and onion, and sauté until onion is soft and starting to brown.
Add the capsicum and tomatoes and cook until the capsicum is slightly softened. Add the stock and coconut milk, bring to the boil, and then add the fish and lime juice.
Cover and simmer until the fish is cooked through.
Serve and garnish with the coriander.

Try other lower fat proteins for variety.
