Weekly grocery shop showing some regulars on our list as a mostly plant-based family 🌱

Tofu always features! It is my favourite source of protein. Even if you are not vegetarian I highly recommended experimenting with tofu, it is such an affordable protein source πŸ’ͺ and so versatile! πŸ˜‰

Level up your dinner game with this easy, flavour-packed noodle bowl 🍜
Double-baked tofu coated in a delicious gochujang sauce (a recent discovery for me and I'm definitely hooked!), served with creamy tahini & miso noodles, pair with a crisp salad, kimchi or your favourite pickled veggies.

A completely plant-based meal that's big on flavour and satisfying enough that even your meat-loving friends will be asking for seconds! 🌱

*keep in mind with the quantities I like to make enough to make sure I have leftovers (cook once, eat twice = winning)

Double-baked Tofu:
600g tofu
2-3 Tbsp tapioca flour or cornflour
Salt and pepper
Drizzle of oil
🌱 combine the above and then either bake or air fry in one layer for about 15mins or until lightly golden.

Tofu Gochujang glaze*:
1/2 tsp garlic powder
2 Tbsp soy sauce
1 Tbsp Sesame oil
2 tsp sugar
1 Tbsp rice vinegar
1-2 tsp Gochujang paste
🌱 whisk all ingredients until combined

Pour over golden Tofu and then put back in over or air fryer for another 10-15mins until sticky.

*Note these quantities of the glaze were for half the tofu, as I took half the tofu out for the kids before coating with spicy sauce.

Noodles of choice - ramen, udon, rice or soba
Noodle sauce:
1 Tbsp tahini
2 tsp miso
1 Tbsp soy sauce
1 Tbsp rice vinegar
🌱 whisk above ingredients together then stir through cooked noodles

Pair with pickled cucumber, or other veges. I made a salad with cucumber red onion and coriander, dressed with a glitter rice vinegar, sesame oil, salt and sugar.

Highly recommend seeing a registered Nutritionist or dietician before heading to the Supplement store! It will save you money that you will undoubtedly spend on supplements you don't need, and may prevent doubling up of nutrients which can be detrimental πŸ’Š

Meat free Monday sorted πŸ‘Œ Filled with protein, fibre and Iron. This quick and easy dinner is our go-to when we are short on time and everyone is hungry! Choose to add in all the extras (veges, lentils, walnuts) or keep it simple with the TVP and tomato based sauce.

4 serves

Ingredients:
Pasta of choice - spirals, curly lasagne, orzo or spaghetti. 4 serves
2 Tbsp Olive oil
1 Onion diced
2 cloves Garlic (or use powdered garlic 1/2 tsp)
Oregano, Thyme, Basil or italian herbs (2 tsp mix)
2-3 tbsp tomato paste
1 can of tomatoes
1/2 packet of TVP (~100g)
1 can lentils, drained (or use full packet TVP)
1/2 cup of stock (reduced sodium) or water
2 tsp sugar
Salt and pepper

Bonus ingredients:
2 TBsp Nutrional yeast (optional)
1/4 cup finely chopped walnuts (optional)
1 cup finely diced or grated veges (optional just whatever you have handy that needs using - Carrots, courgettes, mushrooms, spinach)

Method
- saute the onion, garlic and herbs in the oil.
- add in the tomato paste and brown off
- add diced veges, if using, lightly saute adding a little water if needed
- add remaining ingredients and simmer for at least ten mins, stirring occasionally.
- may need to add extra water if not saucy enough.

Serve with the pasta and some greens.

Tips πŸ’β€β™€οΈ
Double the recipe! Have leftovers for meal prep - cottage pie, lasagne, lazy lasagne (as pictured), pie or pastry filling (as pictured) so many options.

Camping or hiking, simply take your dried pasta, dried TVP, can of tomatoes, and dried herbs and spices.

100g of TVP = 54g protein + 17g fibre + 11mg Iron πŸ’ͺ

TVP = textured vegetable protein πŸ˜‰

Straight from the family meal plan last week, this super easy weeknight meal was ready in under 30mins and a real hit, I had to share! πŸ₯£

Can be adapted for what you have in the fridge in terms of veges and protein. The sauce is really simple and delicious using silken tofu πŸ˜‹ I was really impressed with these new sausages by .nz as well, clean ingredients and add such nice texture to this Gnocchi dish.

Creamy Gnocchi - serves 4

You will need:
Leek (or onion)
Mushrooms
Asparagus or other greens
Sausages
Gnocchi

Sauce ingredients:
Silken tofu (300g - Morinaga brand)
4 Tbsp nutritional yeast
3-4 Tbsp pesto (or use fresh herbs, salt Pepper and a little oil)
Pinch of garlic powder
Juice of half a lemon
Quarter cup of milk (I used soy)
A little water to thin and to rinse blender after

Fry the leeks in some olive oil, then add other veges. I cooked sausages separately (as wasn't sure if they were going fo be spicy for the kids) but you could chop up and just add to the pan.

Cook Gnocchi as per packet instructions, just takes a few mins.

Meanwhile add all sauce ingredients to a blender, blend until smooth add water if needed.

Add cooked Gnocchi to veges and sausage mix then pour over sauce, stir through on low heat until heated through.

Enjoy topped with parsley or other fresh herbs 🌿
