For its August Chef’s Limited Edition Special, Lae International Hotel is serving Moroccan Spiced Lamb Shank with Israeli couscous and galip nuts.

We are proud to see our local galip featured in such a creative dish and celebrated through world-class cuisine.

Ever wondered what a Galip nut looks like before it's ready to eat?

This photo shows the different layers of a Galip fruit and why processing it takes time and care.

1. Outer Fruit (Pulp) - The fresh Galip is actually a fruit. The green outer flesh surrounds the seed and is removed after harvesting.

2. Shell - Once the fruit is removed, you're left with the hard brown shell. Every shell is carefully cracked by hand, one at a time, to avoid damaging the kernel inside.

3. Testa (Skin) - The edible nut is still wrapped in a thin brown skin called the testa. This delicate layer is gently removed.

4. Galip Kernel - Finally, the creamy white kernel is revealed. This is the nutritious Galip nut that is roasted and enjoyed.

From fruit to finished product, every Galip nut passes through several careful steps before it reaches your table. It's a labour-intensive process, but one that helps support rural farming communities across Papua New Guinea πŸ‡΅πŸ‡¬
