How to plant Yacon?

Use planting crowns or stem crowns (the top part of the harvested plant with buds), not the large edible tubers.
Prepare loose, well-drained soil and mix in compost or well-rotted manure.

Plant the crown 5–10 cm deep with the buds facing upward.
Space plants about 80–100 cm apart to give the roots room to develop.
Water regularly to keep the soil moist but not waterlogged.
Remove weeds and add compost occasionally as the plant grows.

Time to harvest!!

8–10 months after planting is the typical harvest time.
Harvest when the leaves begin to turn yellow and die back naturally, which is a sign the tubers have matured.

For the sweetest flavor, many growers let the harvested tubers rest in a cool, shaded place for about 1–2 weeks before eating. This allows some of the starches to convert into sugars, making the yacon taste sweeter.
