From August 4โ7, 2026, the Food and Agriculture Organization of the United Nations (FAO), in partnership with the Northern Mindanao Food Innovation Center (NMFIC), conducted a hands-on training on Fisheries Post-Harvest Technologies and Value-Added Processing Aligned with Food Safety Standards and Certification Requirements.
The four-day activity brought together participants from various Community-Based Organizations (CBOs) for an enriching learning experience focused on strengthening their knowledge, skills, and practices in food safety, fish processing, product development, and value addition.
The training began with lectures on the Fundamentals of Food Safety, GMP, SSOP, and HACCP, equipping participants with essential knowledge on proper hygiene, sanitation, hazard identification, and safe food processing practices.
Learning was then brought into practice through hands-on activities featuring a variety of value-added fish products, including:
-Fish Drying of Tilapia and Hito (Catfish)
-Marinated Boneless Bangus
-Bagoong Alamang (Shrimp Paste)
-Tilapia Squash Pancit Canton
-Flavored Dried Dilis (Anchovy)
Participants also gained practical experience in product formulation and processing, proper packaging and labeling, sensory evaluation, shelf-life considerations, product improvement, and market potentialโimportant skills in developing safe, quality, and market-ready products.
The activity concluded with product evaluation, reflections and sharing of experiences, and the awarding of certificates, recognizing the participantsโ active participation and commitment to strengthening their skills and community-based enterprises.
Through initiatives like this, FAO and NMFIC continue to support communities in transforming locally available fishery resources into safe, quality, and value-added productsโcreating opportunities for improved livelihoods and sustainable fisheries value chains. ๐๐
