🍵 If your matcha tastes different every day, it’s usually not the water or the milk.
It’s the amount.

A little too much and it feels harsh.
A little too little and it tastes flat.

That’s why we like using a 1‑gram measuring spoon:

💚 1 level scoop = a consistent cup

Easy to follow recipes and remember what you like.
Simple to tweak: 1 scoop lighter, 2 scoops stronger.
Once you find your “sweet spot”, you just repeat the same number of scoops and your matcha tastes the way you expect.

𝐒𝐞𝐜𝐫𝐞𝐭 𝐦𝐚𝐭𝐜𝐡𝐚 𝐭𝐢𝐩: 𝐢𝐭’𝐬 𝐧𝐨𝐭 𝐚𝐥𝐰𝐚𝐲𝐬 𝐭𝐡𝐞 𝐦𝐚𝐭𝐜𝐡𝐚 𝐭𝐡𝐚𝐭’𝐬 “𝐭𝐨𝐨 𝐛𝐢𝐭𝐭𝐞𝐫”.
Most of the time… it’s the water. 😅

Matcha is a bit like us in Singapore’s sun – it doesn’t love extreme heat.

🍃 Boiling water (100°C) = burnt taste, harsh and bitter
🍃 Slightly cooled water (around 70–80°C) = smoother, sweeter, gentler
Simple way to get it right without a thermometer:

1.Boil your water
2.Turn off the kettle and wait about 1–2 minutes
3.Then pour over your matcha
Try this once and you’ll taste the difference.

That’s why the quality of the leaves and how fresh the powder is matter so much.

A good matcha will usually be:

🍵 Bright, lively green (not dull or yellowish)
🍵 Fine and smooth, without big grains
🍵 Fresh‑smelling, with a clean, “green” aroma

When you whisk that into your cup, you’re not just tasting flavour.
You’re tasting the care that went into growing, picking, steaming and grinding those leaves – all the way from the farm to your tin, then to your cup.
