Seriously low effort, so it’s truly a favorite. At least among the over-6 year old crowd, this is a family favorite (sorry not sorry to my first-grader).
Have you ever chopped up a whole butternut squash and still had all ten fingers after? If so, well done. But for the rest of us unfamiliar with a machete, this pre chopped mix is full of fiber and flavor. And the mirepoix is a beautiful French name for the celery/onion/carrot base of so many soups and sautés. When I look up crock pot recipes online I need true dump and go. Not brown the meat and cut veggies for an afternoon “go.” That’s hurry up and wait. Pass.
So this is our family “chicken n’ dumps.” Chicken and dumpling soup, enriched (that ramen broth is 💯 if you want to be extra, though!), fiber-ful, veggie-ful, flavorful, and easy AF. Sometimes I love cooking. And sometimes I’m literally running from one responsibility to the next and as much as I want to slow down, if I do I might fall asleep. Standing. Sis this is easy-peasy comfort food that’s almost like a nap. Except it helps you p**p.
So here it is. Those ingredients above in the photo. 2 cups of the broth. Shred the chicken into small pieces when done. Spice to your liking (aka, I have no idea from one time to the next exactly what spices and how much I use each time, which drives my husband nuts, but is a method I think would make for a really fun choose your own adventure cookbook. Waiting for a publisher to agree with me and sign me up!)
KEY TIP: if you don’t like soggy dumplings (no shade, some of you are out there), bake the biscuits first, then break them up into bite-size pieces and put in the crock pot for the last twenty-ish minutes. They hold their shape, chew, and texture so much better!
