This year will be full of exploring the stunning natural beauty that New Mexico has to offer. I went on a birthday eve hike yesterday afternoon in the Sandia foothills and traversed 2.25 miles with 465ft elevation gain (ending at 6800 ft) and I'm filled with so much gratitude for how much my body can do now compared to last year, when walking 1 block on flat ground made my heart rate skyrocket to the 160s-170s thanks to . Oh, and I'd get severe post-exertion malaise after those walks, too, to where I'd be bed bound for days with piercing headaches, swollen lymph nodes, sore throat, severe GI issues, brain fog and memory problems. ☹️

Some people experience elevation sickness, but I feel like I'm experiencing elevation WELLNESS! Well, it probably has more to do with getting out of the humid and moldy south than anything, but still. I have more energy here, am sleeping better, have a MUCH bigger appetite (sorely needed since I lost 20+ lbs and feel like I'm just skin and bones after my horrible long covid experience), and my brain works better too.

It's been a bit slow for us to get settled in here, but SOON I will be getting back into producing new recipes and other wellness and beauty content for my website. Thank you for being patient with me since I caught covid last June. It turned my world upside down and I had to take such a looooong hiatus from work to recover. I'm ready to get back in now!

36 was a dark, dark year for me. I spent most of it pretty disabled from being a long hauler. I honestly didn't believe I would survive at times. But here I am. A survivor.

HOME AT LAST - after two grueling 18-20 hr days with me driving our truck and Andy driving the moving truck from Memphis to Oklahoma City to Albuquerque with our four furbabies, WE'RE HOME! I can already feel how much better the dry elevated climate here is for my health. Our home is so cute and our neighborhood beautiful and quiet. I'm overwhelmed at how many amazing gluten-free food options there are here, and with the natural beauty of this place. I'm sharing lots of tidbits in my stories and will get back to posting more in the feed soon, after we get more unpacked!

I am so incredibly grateful for all of my friends on both ends of the move who helped, we could not have done this without it. It's bittersweet because I miss Memphis but at the same time am enthralled with Albuquerque. Hope y'all have a great week, and I'll see you more soon!

Hello friends, I'm happy to share with you how much better I am doing now thanks to a combo of getting the Pfizer vaccine series, tons of rest and rehab, Chinese medicine, and healthy lifestyle habits. So good, in fact, that I will be at our Mobius Theorybooth at Memphis Crafts & Drafts Festivaltomorrow 7/10 from 10-4 at Crosstown Concourse!

It's the last show we will be doing in Memphis before we embark on our move to Albuquerque, New Mexico 🏜 I would love to see as many of you fellow Memphians as I can tomorrow! I'll have all 3 of my cookbooks and bags of my vegan and Paleo Cheese Mix from Legit Bread Company available for purchase. There will be a deep "pandemic special" on all of my existing Memphis photo prints as well.

Eek, I know this is a lot of news all at once! I have a lot to say both about my recovery and what led to our decision to move to NM, and I will share those updates on my website soon. I will say that my therapy journey treating has played a significant role in both areas. Traumatized bodies, especially belonging to women, do not heal well or easily until the trauma is healed.

And I'm absolutely stoked for you to see the new kitchen I'll have the honor to cook in in NM. It's freshly remodeled, huge, absolutely beautiful, and has a GAS STOVE 🙌

I hope you have a good day yesterday for Thanksgiving even though it probably looked different than you're used to. It did for me! had a lazy day and make mofongo. He picked up fresh chicharrones, I made sofrito from my Latin Paleo cookbook and used it to marinate lion's mane mushrooms for me and turkey breast steaks for Andy. Recipe for how to make mofongo is both on my website and in the book. It's one of my favorite dishes ever! Green plantains are fried and smashed with chicharrones and garlic, shaped into a bowl and stuffed with filling of choice.

I HAVE A FAINT SENSE OF SWEET TASTE AGAIN!! 🙌 For 21+ weeks since I had acute , I've had a complete and total loss of ability to taste sweetness 🍭

I've tested it pretty much daily with things like sugar or honey directly on my tongue. It's pretty wild to have them register as absolutely nothing! Since it had been gone for such a long time, I had begun to fear it may never return 😞

But! This morning I was drinking my electrolytes (with real sugar) as usual and I almost dropped the glass because I was so startled to realize it tasted SO different and I could actually detect the sweetness! 🧐😳😱🥺😭🙏😁

It's been a long time since I've bawled happy tears like I did today. I'm SO encouraged by this shift, even though it is small. I'd say I can only taste 5-10% of what's there. But what a wonderful experience it is to taste the depth and nuance that sweetness gives to food!!

Then I got glammed up while riding that emotional high because we filmed a brand video for this morning. I had so much fun doing a full face of makeup with mostly all new products!

💊Low dose naltrexone: this is even being studied for COVID in a clinical trial. I started on 8/3 and think it has helped keep my mood stable. In the last month it's finally started help me sleep better. I wonder how much worse I would have been without it!⁣⁣⠀

🧘🏻‍♀️Meditation: I'm a veteran meditator (started at age 16) and it has kept me grounded and helped me work through difficult emotions related to my situation. I also enrolled in a 8wk course to deepen and expand my practice. ⁣⁣⠀

🗣Therapy & : this chronic illness experience has triggered some deep childhood trauma, and reprocessing it with EMDR and processing with tools like sand tray and art therapy have had profound positive impacts. ⁣⁣⠀

🛌REST: learning to embrace rest and allowing myself to sleep as much as I need (some nights 10-12hrs) has been non-negotiable. I've gotten quite skilled at hearing the subtle (and loud) messages from my body that my energy is depleted and I need to lie down. No more fighting through and crashing, or conflating my value with my "productivity" (because healing is productive!)⁣⁣⠀
