Yesterday, Executive Sous Chef Josh Pera and Director of Dining Services Walter Rowin hosted an educational culinary demonstration exploring one of Mexico’s most fascinating culinary traditions: mole. Of course, no culinary seminar is complete without tasting the subject. Chef Josh prepared Mole Coloradito with chicken and rice which was very well received by the residents.
These demonstrations are an opportunity not only to enjoy something delicious, but also to explore the history, culture, and craftsmanship behind the foods we eat.
