Comfort food season is HERE! 🍂
This week on Cooking with Ashley, we're making a creamy, hearty Wild Rice Dish with ground beef, mushrooms, and plenty of flavor. Perfect for those chilly Minnesota nights!
Ingredients:
2 cups cooked wild rice
1 package baby bella mushrooms, chopped
1 yellow onion, chopped
2 ribs celery, chopped
2 Tbsp water
1 tsp salt
¼ tsp black pepper
2 Tbsp butter
1 lb ground beef
2 cups beef broth
1 cup heavy cream
Directions:
1. Cook wild rice according to package directions. Ashley likes to make hers ahead of time in the Instant Pot!
2. While the rice cooks, brown ground beef in a skillet until fully cooked. Remove and set aside.
3. Return the skillet to medium-high heat. Add 1 Tbsp butter, onion, and celery. Season with salt and pepper and sauté until softened.
4. Add remaining 1 Tbsp butter and mushrooms. Cook until tender.
5. Add 1 Tbsp water to deglaze the pan, scraping up the browned bits.
6. Return beef to the skillet. Add cooked wild rice, 1 cup beef broth, and heavy cream.
7. Stir and reduce heat to medium-low. Simmer until thick and creamy, adding more broth if needed.
8. Taste, adjust seasonings, and enjoy!
Save this one for your next cozy dinner!
