I get so excited over the little things. 😊🌱

A while back I ate a soursop and decided to save the seeds instead of throwing them away. Well…look at them now! They’re sprouting!

And that’s not all….my avocado seed has finally sprouted too! 🥑🌱

There’s something special about planting a seed and watching it come to life. It reminds me that growth takes time, but it’s always worth the wait.

Now comes the fun part…seeing how big they’ll get.

I’ve been making a few changes lately.

One of my goals is to eat more protein and build more muscle, so I’ve been putting a little more thought into what goes on my plate.

Today’s breakfast was a tofu scramble with colorful bell peppers, onions, and Ezekiel bread. Simple, filling, and packed with plant protein to help fuel my day.

One thing I’m learning is that eating healthy doesn’t have to be boring or complicated. It’s about making small, consistent choices that help you feel your best.

As I get older, I’m choosing strength over the number on the scale. I’m excited to see where this journey takes me, and I’m grateful to have all of you along for the ride.

Whew… this summer has been BUSY! Between work, life, my garden, and simply taking time to recharge, social media had to take a back seat for a little while.

But I’m still here… still cooking, still learning, still growing, and I’m excited to start sharing with you all again.
