🍤 Celina’s Salt & Pepper Shrimp with Jasmine Rice 🍚✨
Looking for a quick dinner that's crispy, savory, and packed with flavor? This is one of Celina's go-to meals when she wants something that tastes like takeout at home! 😍
What you'll need:
🍤 1 lb shrimp, thawed
🧅 ½ yellow onion, diced or julienned
🧄 4–6 cloves garlic, sliced
🌱 Green onions, chopped
🌶️ Thai chili peppers, sliced (optional)
🍚 Jasmine rice, prepare to pkg directions or rice cooker
✨ Oil for Frying
Season Shrimp with:
✨ Salt& Pepper, to taste
✨ 1/2 tsp Ginger powder
✨ 1/2 tsp Garlic powder
✨ 1/2 tsp Onion powder
✨ Pinch of Cayenne pepper
✨ Dash of sugar
Flour Coating:
✨ 1 cup flour
✨ Sprinkle of salt
✨ Sprinkle of black pepper
✨ Dash of sugar
Directions:
1. Thaw the shrimp completely and pat dry.
2. Prep your vegetables
3. Start cooking your jasmine rice. A rice cooker works great and allows everything to finish at about the same time.
4. In a bowl, combine: 1 cup flour, sprinkle of salt, sprinkle of pepper, dash of sugar
5. Season the shrimp with: Salt, Pepper, Ginger powder, Garlic powder, Onion powder, Cayenne pepper, Dash of sugar
6. Toss the seasoned shrimp in the flour mixture until lightly coated.
7. Heat your preferred cooking oil in a pan over medium-high heat. Fry the shrimp for about 2–3 minutes until lightly golden and cooked through. Remove and set aside.
8. In a separate pan, add a little olive oil or avocado oil. Add the onions and sauté for about 1 minute until fragrant.
9. Add the sliced garlic and cook for another 1–2 minutes. If using Thai chili peppers, add them now.
10. Return the cooked shrimp to the pan and toss everything together. Season with a little extra salt, pepper, and a small dash of sugar.
11. Finish with chopped green onions and serve over warm jasmine rice.
