Meet Claudia, a facilitator with twenty seven years of experience in SFC’s cooking and nutrition education program The Happy Kitchen / La Cocina Alegre® (THK/LCA® ).💚🥗‼️ For Claudia and her family, THK/LCA is so much more than a cooking class. The free and bilingual (Spanish/English) six-week courses are a space to put values like culture, community, sustainability, and wellness through nutrition into practice.

: Buying fresh, seasonal produce from a local farmer is a simple step you can take to prioritize food safety this summer. 🧑‍🌾 As the parasite cyclospora (cyclo-spore-uh) reaches Texas produce, here’s what to know:

Imported vs. Local Food – Previous cyclospora outbreaks were linked mainly to imported herbs, salad greens, and berries. Clean water where food is grown is a key factor in food safety, and imported produce may come from areas in the world with less access to water treatment.

Contamination may also be introduced to imported produce during transportation. Buying seasonal produce from small farmers in your area gives you a chance to know more about the resources that went into what you’re eating.

The Happy Kitchen is Coming to Houston! We are recruiting community members across Houston to join our free peer-led cooking and nutrition education program as facilitators and participants. 👩‍🍳

Since our classes our peer-led, it is important to experience The Happy Kitchen classes! We are hosting a virtual 6-week series on Thursdays from 6:30 - 8:00 PM starting July 16th. You must attend at least four of the six classes to become eligible for our paid facilitator training.

What does being a facilitator with THK look like?

· Help the community you know and love improve their health and access to nutritious foods

· Receive a $450 stipend at the end of each class series
· Access the latest evidence-based continuing education from SFC

Summer is 🍑 season! Texas peaches are known for being delicious, but especially peaches from Fredericksburg, Texas. So how did Fredericksburg become the Peach Capitol of Texas?

1850-1920: German and Polish immigration to the Texas Hill Country created a distinct culture in the region. Many immigrants were farmers in Europe and brought agricultural skills with them. It’s thought that “cobbler” first appeared in this era as a dessert to enjoy “cobbled together” ingredients.

1920-1950: In 1921, boll weevils destroyed many Texas cotton crops, prompting farmers to BRANCH OUT into fruit production!

Farmers in the Fredericksburg and wider Gillespie County areas found that regional weather and soil conditions produced large, sweet peaches.

1950-1980: The Texas peach industry peaks, enjoying booming sales both directly from farmers via farm stands and markets and in wholesale markets.

1980-2026: Gillespie County still produces about ⅓ of Texas peaches, but small farmers across the state are under pressure from farmland development and industrial scale competition.

Welcome to SFC Farmers' Market Downtown No Label Mushrooms! 🍄‍🟫The highlight of our No Label was seeing the reishi mushrooms enjoying sunshine on the porch to boost their vitamin D content before going to market. 🍄‍🟫🌞🍄‍🟫
