Spring roll noodle salad! It’s all the components of spring rolls, minus the rice paper and wrapping, in a saucy noodle dish, and exactly what I crave for a nourishing meal when the weather gets warmer. Made with crunchy veggies, seasoned chicken, fresh herbs, and a sweet and tangy dressing to bring it all together. It’s packed with flavor and high in protein for a hearty yet fresh dish for dinner, plus it makes a ton and is great for meal prep.

Green pasta! I picked up some fun pasta at the store, and I envisioned a bright and fresh green pasta sauce, so that’s what we did! Everyone really enjoyed it, and my one-year-old loved it with the broccoli! Will definitely make again.⁠

For the sauce, I sauteed onion, garlic, and spinach in olive oil and then blended it with 1 cup full-fat cottage cheese, lemon zest and juice, lots of fresh basil (the more the better), parmesan cheese, pasta water to thin it out, and some s&p. Mixed it with some sauteed baby broccoli, shredded chicken, and the pasta.⁠

Full day of eating 13 months postpartum (when do you stop saying how many months postpartum you are?) and still breastfeeding. I’m focusing on getting in enough protein and fiber, a variety of nutrient-dense foods, and just making sure I’m eating enough food in general. I usually eat breakfast before a walk but it’s getting hot here so we switch it up to get out early enough.

Making sourdough finally made it off my vision boards! My first attempt and I’m super happy with the outcome. Crusty crispy 😂 I followed beginner’s sourdough recipe. Excited to get better and better the more I bake!

Greek yogurt pancakes! They are made with simple ingredients of rolled oats, greek yogurt, eggs, lightly sweetened with honey, and flavored with vanilla and cinnamon. Light, perfectly fluffy, super easy to make, and filling thanks to the addition of greek yogurt. One serving packs 23 grams of protein (no protein powder needed!) and 7 grams of fiber!⁠

Hands down the easiest casserole recipe - chicken taco casserole! Shredded chicken, peppers, black beans, corn, salsa, greek yogurt, and taco seasoning are all baked together and topped with melted cheese and tortilla chips (and whatever other toppings you love). Absolutely delicious and a quick and healthy dinner recipe that’s ready in 45 minutes and is great for meal prep!⁠
