This past month I’ve really been focusing on setting up future me for success with easy meals. When I cook, I try to make extra servings of the whole meal, or even just 1 ingredient, and then vacuum pack and freeze that item for a future meal.

My current fave leftovers are:
Beef chili
Pork carnitas
Veggie lasagna
Jerk chicken with coconut rice
