* 2 medium Yukon Gold potatoes, dicedโ

* 2 cups sliced mushrooms (half of a 10-oz. package)โ

* 4 cups baby spinach (half of a 5-oz. bag), choppedโ
* 4 scallions, thinly sliced (about 1/2 bunch)โ
* ยผ teaspoon dried thymeโ
* ยผ teaspoon ground pepperโ
* 6 large eggsโ
* ยฝ cup nonfat cottage cheeseโ

* 4 teaspoons olive oilโ
* 1 clove garlic, mincedโ

* 1 medium cucumber, cut into 1/2-inch chunksโ
* 2 medium tomatoes, cut into 1/2-inch chunksโ

Whisk together lemon juice, olive oil, garlic, cumin, chili powder, salt, and pepper in a bowl. Add the cucumber, tomatoes, and avocado, then toss gently to coat. Set aside so the flavors can blend while the frittata cooks.โ

2๏ธโฃ While the potatoes cook, heat 2 teaspoons of oil in a medium skillet over medium-high heat. Add the mushrooms with a pinch of salt and cook, stirring, until they release their liquid.โ
3๏ธโฃ Stir in the spinach, scallions, thyme, and pepper, and cook for another 2โ3 minutes until the spinach wilts. Transfer the mixture to a plate and allow it to cool. โ
4๏ธโฃ In a large bowl, whisk together the eggs and cottage cheese. Add the cooked potatoes and cooled vegetable mixture, then stir until evenly combined.โ
5๏ธโฃ Heat the remaining oil in the cleaned skillet over medium-high heat. Pour in the egg mixture and cook for about 3 minutes, gently lifting the edges with a spatula so the uncooked egg can flow underneath.โ
6๏ธโฃ Cover the skillet, lower the heat, and continue cooking for 6โ8 minutes, or until the frittata is fully set and no liquid egg remains on top.โ
