I’m so excited to be back and to bring back one of my passion projects, Courtney’s Kitchen, to the Ark-La-Tex! 😁

After an extended maternity leave, I’m thrilled to be returning to KTBS as a contributor. I’ll share more in a follow-up video about what that role looks like, but for now… Tune in every Wednesday during the Midday, 3 PM, and 4 PM newscasts for Courtney’s Kitchen!

Something I struggle with is ~perfectionism~
I’ve struggled with it my whole life. Just when I think I’ve gotten better at managing it in one area, it migrates to another.

In college it was with my relationship with food. I struggled with a legalistic view: unhealthy vs healthy, good vs bad. I would equate food with morality. If I ate something “bad,” I didn’t have willpower, I was a bad person, and I was going to be a bad dietitian.

Thankfully, that’s not how I think about food anymore. Years ago, I found balance and food freedom, and now I get to help others find the same every day!

But perfectionism still creeps back in—lately, in my business and in motherhood. I get stuck in an analysis-paralysis loop: I overanalyze, so I don’t act, so I feel bad about not acting, and the cycle repeats. In my business specifically, wanting to show up perfectly (which is impossible) sometimes means I don’t show up at all.

What I have to remind myself of daily: just showing up consistently is better than being perfect. I want to prioritize progress over perfection.

“It all begins and ends in your mind. What you give power to has power over you, if you allow it.” This is of my favorite quotes, by Leon Brown, and it helps on days when the perfectionism noise is loud 🗣️

🎉 Client win Wednesday!

One of my nutrition clients is 27 pounds down and has lowered his A1c from 9.0% to 7.5% through consistent changes to his nutrition, mindset, and physical activity (and no GLP meds). 👏

AND he hasn't given up the foods he loves. Instead of eating cookies, ice cream, and other treats all the time, he's learned how to enjoy them in moderation while prioritizing foods that help him feel his best and support his diabetes goals.

This is what sustainable change looks like:
✔️ Better blood sugars
✔️ Weight loss
✔️ More confidence around food
✔️ No food guilt or perfection

His goal is to continue improving his health and, with his provider's guidance, potentially reduce his reliance on diabetes medication in the future.

New sourdough class idea! 💡

I’m planning a ~focaccia art class~ 😍 these would be seasonal- think fall, halloween, thanksgiving, Christmas, spring, Easter, etc.

You’ll still learn sourdough basics, receive your own starter, and take home dough to bake your own focaccia bread. You’ll decorate your focaccia with fresh ingredients to create edible artwork (see photos for inspiration!)

I’m hoping to offer these at a lower price point than my traditional sourdough classes.

Would this be something you’d be interested in? What seasonal themes would you love to see?
