Today’s rest day features some mandatory quarantine baking, Double chocolate fiber protein muffins!

Tasty pastries that are “unhealthy” for u can be modified so it becomes some what nutritious while not completely turning it into cardboard mush...😵
But why are certain pastry deemed “unhealthy”?
Most of the pastry recipe have too much sugar and calories. In my opinion, that is where it’s unhealthy. 👨🏻🏫
So my solution for that is to
1. slow down absorption and increase satiety by incorporating fiber and protein
2. decrease sugar addition
3. dilute with extra flour
Ingredients:
- Protein muffin mix 400g
(total of 72g protein, 24g fiber)
- Extra flour 200g
- Milk of choice - 2 cups
(I like doing equal parts milk and soy milk, 15g protein)
- Water - varies 0.5-1cup to consistency
- Fiber powder of choice (flax, psyllium, acacia) 7 scoops
(77g of fiber)
- Eggs x 3
(18g protein)
- Chopped nuts and chocolate trail mix - to preference, but I used about 2 cups
(Additional grams of protein and fiber)
This recipe ended up yielding 17 muffins.
So, not counting the protein and fiber from flour/nuts; ideally, EACH muffin should have at MORE THAN 6g of fiber, 6g of protein!
While the calories might be higher, I think just one of these bad boys will have you full! Let me know what you think!
