Mediterranean Monday 🫒
Roasted Red Pepper Hummus

Creamy, flavorful, and packed with plant-based protein and healthy fats — this Mediterranean-inspired hummus makes the perfect light lunch, snack, or appetizer while supporting your wellness and weight loss goals!

Ingredients
1 (12 oz.) jar roasted red peppers, drained
2 (15 oz.) cans chickpeas, drained & rinsed
1/2 cup tahini
1 garlic clove
1/4 cup lemon juice
3/4 tsp kosher salt
1/2 tsp ground cumin
1/4 cup olive oil, plus extra for serving
Chopped parsley, for garnish
Paprika, for garnish
Toasted pita & crackers, for serving
Olives, for serving
Directions
Pat the roasted red peppers very dry to remove excess moisture.
Add the peppers, chickpeas, tahini, garlic, lemon juice, salt, and cumin to a food processor. Blend until smooth and creamy, about 3–4 minutes. Add cold water 1 tablespoon at a time if needed to help blend.
Add olive oil and process another 10 seconds until silky smooth.
Spoon into a serving bowl and create a swirl on top. Garnish with parsley, paprika, and a drizzle of olive oil.
Serve with toasted pita, crackers, and olives.

Mediterranean Monday
Spinach & Feta Stuffed Salmon 🫒🐟

✨ Packed with lean protein, heart-healthy omega-3s, fresh herbs, spinach, feta, and antioxidant-rich tomatoes.
Spinach & Feta Stuffed Salmon

Mediterranean Monday Recipe Instructions 🫒🐟

Ingredients

4 oz cherry tomatoes, seeded and chopped
Kosher salt
2 Tbsp extra-virgin olive oil, divided
3 cloves garlic, finely chopped
2 scallions, sliced (separate white and green parts)
5 oz fresh spinach, chopped
2 Tbsp fresh thyme, chopped
2 Tbsp plain whole-milk Greek yogurt
1/4 tsp ground coriander
1/4 tsp ground cumin
2 oz feta cheese, crumbled and divided
4 salmon fillets (about 6 oz each)
1/2 tsp crushed red pepper flakes

Step 1 – Prepare the Tomatoes

Preheat your oven to 400°F.
Place chopped cherry tomatoes into a fine mesh strainer over a bowl.
Sprinkle with a small pinch (about 1/4 tsp) of kosher salt.
Let tomatoes sit for about 5 minutes to drain excess moisture.

Step 2 – Cook the Spinach Mixture

Heat 1 tablespoon olive oil in a large oven-safe skillet over medium heat.
Add:
Garlic
White parts of scallions
Cook for about 1 minute, stirring frequently until fragrant
Add:
Chopped spinach
Fresh thyme
Continue cooking about 3 minutes until spinach is wilted.
Remove from heat.

Step 3 – Drain & Cool Filling

Transfer drained tomatoes to a medium mixing bowl.
Place spinach mixture into the strainer to remove excess liquid.
Let cool slightly.
Pat mixture dry gently with paper towels.
Carefully wipe out skillet and place it into the oven to heat while preparing salmon.

Step 4 – Make the Filling

To the bowl with tomatoes, add:
Spinach mixture
Greek yogurt
Coriander
Cumin
Half of the feta cheese
Mix thoroughly until evenly combined.

Step 5 – Stuff the Salmon

Pat salmon fillets dry with paper towels.
Season both sides generously with kosher salt.
Using a sharp knife, carefully cut a deep pocket into the side of each fillet without slicing all the way through.
Spoon filling evenly into each salmon pocket.

Step 6 – Bake the Salmon

Carefully remove the hot skillet from the oven.
Add remaining 1 tablespoon olive oil.
Place salmon fillets skin-side down into skillet.
Bake for 8–10 minutes, or until salmon flakes easily with a fork.

Step 7 – Broil for Finish

Turn oven to broil.
Broil salmon for about 2 minutes until tops are lightly golden.
Watch closely to prevent burning.

Step 8 – Garnish & Serve

In a small bowl combine:
Remaining feta
Green scallion parts
Crushed red pepper flakes
Sprinkle mixture over salmon before serving.
