Celiac disease isn’t simply a gluten “sensitivity” or irritation.
It’s an autoimmune condition where gluten triggers the immune system to respond incorrectly and attack the body’s own tissues.
That’s also why we often see celiac disease alongside other autoimmune conditions like Hashimoto’s, rheumatoid arthritis, and type 1 diabetes.
Understanding the difference matters, because this is an immune system issue, not just a digestive one.
