Honey Oat Breakfast Cookies π―πΎ
Wholesome, lightly sweet, and wonderfully satisfying. These breakfast cookies are easy to make together and perfect for a slow summer morning. Oats support heart health and provide sustained energy, making this a nourishing activity and treat all in one. β¨
Ingredients
πΎ 2 cups rolled oats
π 2 ripe bananas, mashed
π― 3 tbsp honey or maple syrup
π§ 3 tbsp melted butter or coconut oil
πΌ 1 tsp vanilla extract
π₯ 1/2 tsp cinnamon
π§ Pinch of salt
π« 1/2 cup blueberries or raisins (optional)
π° 1/4 cup chopped walnuts or pecans (optional)
Instructions

Preheat oven to 350Β°F (175Β°C) and line a baking sheet

Mash bananas well in a large bowl

Stir in honey, melted butter, vanilla, cinnamon, and salt

Fold in oats until fully combined

Gently mix in blueberries and nuts if using

Scoop rounded tablespoons of mixture onto the baking sheet

Flatten each gently with the back of a spoon

Bake for 12 to 15 minutes until golden at the edges

Allow to cool for 5 minutes before serving
