It’s and today, we’re highlighting our Cornelius RD, Amanda Averett! Amanda obtained her Masters in Nutrition at Meredith College in Raleigh, NC and is a Certified Personal Trainer. Her special interests include sports nutrition and managing GI conditions. Here’s a few fun facts about Amanda: ⁣

🥗 She studied nutrition & the Mediterranean Lifestyle in Italy as part of her Dietetic Internship ⁣
🥜 Strongly dislikes all things peanut butter despite not having an allergy ⁣

These are just a few of the reasons we started the Challenge 🌱⁣

Eating a meatless meal once a week has been associated with improved heart health, reduced risk of developing chronic health conditions such as type 2 diabetes, and increased longevity. On top of the health benefits, you can also reduce your environmental impact by swapping out your animal-based protein for a plant-based alternative! ⁣

It’s Meatless Monday and we’re sharing a vegetarian recipe that you can use as an entry to our challenge! This dish takes less than 5 minutes to prep and is packed with plant-based protein 🌱 Give it a try, snap a picture, and follow our Meatless May contest rules (see initial post below) to win a 6 month membership to and a grocery store gift card! ⁣

- 1 cup uncooked quinoa⁣
- 2 tsp chili powder⁣
- 1/2 tsp cumin powder⁣
- 1/4 tsp garlic powder⁣
- 1/4 tsp salt⁣
- 1 can black beans, or 1 1/2 cups cooked⁣
- 1 can corn, or 1 1/2 cups cooked⁣
- 1 cup crushed tomatoes, canned or fresh⁣
- 1 bell pepper, diced (1 cup)⁣
- 1/2 cup onion, diced⁣
- 1 cup shredded regular or vegan cheese OR nutritional yeast⁣
- 1 cup water⁣

1. Preheat oven to 350 F. Line an 8-inch pan with parchment paper, and set aside. ⁣
2. Drain the beans and corn. In a large bowl, combine all ingredients until well-mixed. Spread into the prepared pan, and bake on the center rack 28 minutes. ⁣
3. Without opening the oven door even a little, turn off the heat and let the casserole sit in the closed oven for an additional 25 minutes. ⁣
4. Remove, and serve. The casserole will firm up more overnight as well – store leftovers covered in the fridge for 3-4 days.⁣

*Instant Pot Version: Add an extra 1/2 cup of water and set it to manual for 8 minutes⁣

“I have had lupus for 15 years. Along with regular doctor appointments and medication, I think the best thing I did for myself was to learn about nutrition and follow a well balanced eating plan. I want my body to be as healthy as possible so I can live my best life with lupus and the more I learned the more I knew nutrition was the key to that. A good diet not only could help me keep my organs healthy, it also improves my energy levels and sleep and combats some of the lousy side effects of medication. I felt so passionate about it I planned on going back to school to become an RD... but when that didn't work out, I found the next best thing and started working for a team of RDs!” ⁣

This comes directly from one of our hardworking administrators, Janice (check out the the 2nd photo to see her lovely smile!), who also lives with lupus. May is Lupus Awareness Month and today is Put on Purple Day! ⁣

We wear purple to raise awareness and rally support so lupus gets the attention it deserves. The RDs & staff of Nutrition HealthWorks put on purple to join the cause. We invite you to do the same! 💜

Can you spot the veggies in this mac & cheese? ⁣👀⁣

This dish incorporates pureed cauliflower to make a creamy cheese sauce as well as high-protein pasta for a balanced meal! This recipe is dietitian (& kiddo) approved and could make for the perfect entry into our Meat "Less" May challenge 🙌🏼 See below and save for your next dinner recipe: ⁣⁣
⁣⁣
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣⁣
- 3/4 lb. high-protein pasta (like Banza or Barilla Protein-Plus)⁣⁣
- 2.5 cups shredded cheddar cheese⁣⁣
- 1 large head cauliflower, chopped into 1-inch pieces⁣⁣
- 1 and 1/2 cups vegetable stock⁣⁣
- 1/2 teaspoon kosher salt ⁣⁣
- Additional salt & pepper, to taste⁣⁣
⁣⁣
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:⁣⁣
1. Add cauliflower florets, stock, and salt to a medium saucepan. Cover and place on the stove over medium-high heat. Cook for ten minutes.⁣⁣
2. After ten minutes, give cauliflower a stir. Re – cover and cook for ten minutes more or until cauliflower is very easily pierced with a fork.⁣⁣
3. Turn off the heat and leave the covered pot on the stove for an additional ten minutes. Meanwhile, cook pasta according to package directions and drain. ⁣⁣
4. Use a large spoon or ladle to carefully transfer the cauliflower and any remaining stock to a blender or food processor. Cover and blend for at least thirty full seconds until cauliflower has formed a smooth, thick cream.⁣⁣
5. Add mixture back to pot and combine with shredded cheese. Cook until cheese is melted. Add in cooked noodles, combine and enjoy! ⁣⁣
