Meals we’ve enjoyed lately!😋🥗🥭🥕🫑🥬🍋
1. Purple rice, beans, corn salsa, mango salsa, guacamole, and a big salad with toasted walnuts!
2. Pad Thai (from Be A Plant-Based Woman Warrior)
3. Brown rice, peanut sauce, tofu cubes, green peppers, broccoli, corn, carrots, onion, black beans, corn, tomatoes, and spring greens!
4 & 5. Brian’s Lasagna (from Be A Plant-Based Woman Warrior)
6. Anns Open Faced Twice baked potatoes (from Be A Plant-Based Woman Warrior), artichokes, whole grain bread with jam, salad and walnut sauce
7. Purple rice, tofu scramble (tofu, veggies, turmeric and nutritional yeast — you can find the recipe on our YouTube channel “Plant-Based with Jane and Ann Esselstyn”, guacamole, corn salsa, black beans, mango salsa, tomatoes, salad
8. Baked potatoes with roasted cauliflower and broccoli bits and lemon tahini sauce (both from Be a Plant-Based Woman Warrior), mushrooms, peppers, salad
9. Purple rice Nori Rolls (tofu, mango, cucumber, pepper, green onion) with ginger, wasabi, and some Potato fries with ketchup
10. Big salad, pad Thai, marinated mushrooms
11. Buffalo Cauliflower Tacos with salad, guacamole, marinated mushrooms, corn salads, cranberry salsa, romaine
12. Chili, salad, cranberry salsa
