Plus I was vegetarian for 6 years before that. I have been in love with cooking since I was a child. I have a lot of talented women to thank for spending time with me in the kitchen. I have spent the last 10 years working in the food industry. From dish to hostess, I have done just about everything. I have a bachelor’s degree from Syracuse University in Nutrition Science and a Master’s degree in P

ublic Health at The Ohio State University. This blog serves as a place for me to express my love of cooking and everything that it intersects with. I strive to make the vegan lifestyle an approachable and conscious option for people of any cooking experience, financial status, or dietary preference. All recipes on this site are vegan and my creation, unless other credit is given. I live with my husband, Josh, our daughter, Aurora, our dogs, Rigby & Roand, our goat, Pluto, and our cat, Donnie. We strive for simplicity, choosing experiences over things, and spending a lot of time with music and the great outdoors.

Motherhood has made meals unpredictable. I have had to become flexible about what time I eat, how I prepare food, and what I eat. Aurora needs to be at the top of the food chain, meaning if she’s hungry, she gets fed. If she’s fussing, dinner becomes something I can prepare with one hand. And most meals need to be easily eaten with one hand (utensil or not).

The addition of blueberries to my waffle recipe makes them burst with a little juicy sweetness that satisfies without maple syrup and melty butter oozing all over. These are also 💯 times more delicious than a prepackaged frozen waffle. I simply allow the cooked waffles to cool completely and then throw them in a freezer bag and freeze. Pop them in the toaster to reheat.

Sunday brunch from the Guide to Vegan Cooking. It’s a tofu scramble tortuga with hollandaise sauce, all of course. Two Dollar Radio is a staple in the Columbus vegan community, serving up delicious and creative vegan food and some of the finest literary works. Their new cookbook combines story with some of their staple vegan recipes to try out at home. The recipes are a loose guide to cooking that allow space for creativity, mixing and matching, and ultimately delicious eating. Plus the book is a 5.5” square and doesn’t take up a ton of counter space when cooking - it’s brilliant!

A little smooshed from the 2 hour car ride but made my grandma’s applesauce cake for my mother-in-law’s birthday. Dressed it up with apple pie filling in the middle and on top and cloaked her in cinnamon maple buttercream. Today is also my grandma’s birthday, so making her recipe felt appropriate since I can’t be in NY to see her in person. Also stopped on the way to buy a peck of apples so more apple goodness is on the way.

Always dreaming of weekend breakfasts. Last weekend I made a tofu scramble with sausage, garden veggies (squash, tomatoes, potatoes, onion and pepper), and portobello mushrooms. Sautéed it all on the stove top and then stuck the cast iron in the oven for a half hour. My new go-to method for scrambles!
