Our Full Plate

Our Full Plate "For everyone whose plate is a little too full" FOOD: My recipes aren’t rocket science. You might as well call me Laura Crockpot Cross.

The key ingredients to my favorite recipes are healthy, inexpensive, quick and above all TASTE YUMMY! Take a look at my favorite healthy recipes and let me know how they stack up on your dinner table. CROCK POT: Thank goodness for the genius who invented the crockpot to help save the day and help me plan and cook healthy meals for my family. I will teach you some go- to easy and healthy meals that

will have your family asking for seconds, thirds, and fourths! EXERCISE: All health research points to the same destination: active lifestyles=longer lives. This page will show you how to squeeze a workout in the busiest of days, accomplishments, frustrations, and above all getting kids involved and showing them from an early age that fitness and an active lifestyle is essential. FAMILY: This page is to share tips, complain, and brag about our cute offspring…because we all do it.My husband and I are always trying to find fun (and preferably free) activities to do with our boys but we all know parenting is not all fun and games and there are many times where all we want to do is pull our hair out. So please, for the sake of my boys (and my sanity) share your coping methods and the little things that made life a bit easier.

This is what planning for the week usually looks like in our house because that's the only way I survive and stay on track during the crazy week between long commutes, busy work schedule, kids and family! My secret is I cook a lot on Sundays (most of the time I double recipes) which allows me to cook half of the week even though I have enough food to feed us through the week for lunch and dinner.

What you see:
1. Paleo Broccoli Soup (my secret is using coconut milk which fools everyone that it's not real cheddar). Recipe below

http://ourfullplate.com/recipes/paleo-broccoli-vegetable-soup/

2. A new instapot recipe I need to post similar to the Olive Garden Italian Zuppa Italian Toscana (who knew copy catting a chain restaurant I haven't been in over a decade would be tasty)

3. Hard boiled eggs in the instapot (low pressure for 6 minutes for the perfect gooey middle)

4. His and hers fresh veggies I chop every other day that I snack on between meetings, etc.

What's your go-to quick meals to keep you on track and not caving in?

Happy 7th birthday to my Julian!!! While I have only been home less than a handful of times since Hurricane Harvey hit Texas, I'm glad I was able to sneak away from the chaos to make him our tradition of birthday paleo waffles/ pancakes and bacon shaped in the size of his birthday year! This kid always seems to amaze me with his steadfast work ethic and tenacity to rule the world. Proud to be your mama kid!

Back to school for these BIG guys. Look at these 1st and 3rd graders! They were too cool for school because the boys said they were too old for taking first day pictures. Hate to break it but I will certainly be taking pictures and making them pancakes for years to come, even on their first day of college if I can manage it!

Back to reality for us all. Tomorrow is the first day of school and since we will officially have a 3rd and 1st grader in the house that means they will have more responsibilities around the house to include packing their lunch the night prior. I am sure they will sneak in a treat here and there but I want them to get used to preparing healthy options themselves instead of being "forced" to eat what we pack. My boys are creatures of habit and usually eat the same thing: nitrate free cold cuts, carrots, fresh fruit/ dried mango and some roasted nuts. What other gems do you pack your kids?! LunchBots

My amazing friends Megan and Ben from say our kids' character is up for grabs so it's up to parents to shape it before the world does. Today I took the older boys to do "Murph," my favorite hero WOD. This workout is in memory of Navy Lieutenant Michael Murphy, 29, of Patchogue, N.Y., who was killed in Afghanistan June 28th, 2005. "Murph" is for time:
1 mile Run
100 Pull-ups
200 Push-ups
300 Squats
1 mile Run

The boys did 1.5 miles run and 5 rounds of 5 pull ups, 10 push ups and 15 squats. I did the whole thing despite it taking me over a little over an hour. It was hot and muggy. While this was my slowest time in the last 5+ years, I will always remember it despite wanting to quit, throw up and pass out mid workout. So glad I was able to do this workout with my boys. We talked a lot about honoring those who have paid the ultimate sacrifice. Freedom isn't free.

This picture makes me happy for three reasons:

1. I finally got an ! Woo hoo for birthday presents!

2. The first meal to christen my instapot was made by my handsome hubby, who has spent the last year helping out and going over and beyond with a lot of the household tasks since I was in grad school. It takes a village.

3. Lastly this pressure cooker reminds me of my mother who cooked with the old school version (that whistled when ready) everyday, a necessity for working women back in the day. It's been over 4 years since my mother's memory has gone and I miss our phone calls about everything and nothing. Happy early Mother's Day to my amazing mother who taught me so much, especially about working hard.

For as long as I have known, the military and technology have never had a good marriage. I am not always the best, but I am always looking for ways to be more creative and I welcome any input. The past month my organization has slowly transitioned from the "brick" Blackberry to iPhones and today is the beginning to many more FaceTime syncs calls I'll be testing at work to motivate my Soldiers to prove we are not as antiquated as many think. In order to keep our best talent, we must change with the generations coming through the ranks. So watch out Google and Amazon, the TXARNG can be innovative too!

Decisions, decisions, decisions. Trying to step up my paleo meal choices.
