This is what planning for the week usually looks like in our house because that's the only way I survive and stay on track during the crazy week between long commutes, busy work schedule, kids and family! My secret is I cook a lot on Sundays (most of the time I double recipes) which allows me to cook half of the week even though I have enough food to feed us through the week for lunch and dinner.
What you see:
1. Paleo Broccoli Soup (my secret is using coconut milk which fools everyone that it's not real cheddar). Recipe below

2. A new instapot recipe I need to post similar to the Olive Garden Italian Zuppa Italian Toscana (who knew copy catting a chain restaurant I haven't been in over a decade would be tasty)
3. Hard boiled eggs in the instapot (low pressure for 6 minutes for the perfect gooey middle)
4. His and hers fresh veggies I chop every other day that I snack on between meetings, etc.
What's your go-to quick meals to keep you on track and not caving in?
