These baked chicken meatballs are a simple, make-ahead protein that’s easy, tasty, and totally allergy-friendly! 🤤 They are gluten-free, egg-free, and dairy-free, and you can even freeze them for later.

You’ll need:
🥒 1 small zucchini (about 6 inches)
🍗 1 pound ground chicken thighs or turkey
🫒 1½ tbsp extra virgin olive oil plus more for greasing
🧂 ¾ tsp salt
🧄 ½ tsp garlic powder
🧅 ½ tsp onion powder
⚫ ⅛ tsp black pepper

Instructions:

1. Preheat oven to 400°F with the rack in the middle.
2. Shred the zucchini and squeeze out extra liquid. You should have about ¾ cup.
3. Mix zucchini with chicken, olive oil, salt, garlic, onion, and pepper. Handle gently—overworking can make the meatballs tough.
