Loved getting to try out some of ‘s new winter menu at home! Absolutely loved the EXCITE, which is a Korean Beef Bowl made with grass-fed beef, cucumber kimchi and cauliflower rice. The WARMED was also the perfect way to start the meal. This creamy Butternut Squash Soup is topped with cranberries and pepitas. Right now more than ever it is so important to support small businesses! I feel so fortunate to live in a city with an amazing restaurant like that caters to so many different dietary restrictions. 💕

With scaled back celebrations, you might be left with more than a few leftovers. Thankfully there are lots of amazing uses for leftover turkey. Some of my favorites are Turkey Enchilada Soup, Turkey & Sweet Potato Soup, Turkey Salad Sandwiches and these Turkey Bruschetta! Basically any recipe that uses shredded chicken can be swapped for shredded turkey. 🦃 For the Turkey Sweet Potato Bruschetta with cranberry sauce, search “bruschetta” on my blog!

Want to know a secret? As a child, I preferred canned cranberry sauce. Yup, that jiggly can-shaped gel that you would cut into circular slices. Even when it wasn’t Thanksgiving, I loved this stuff as a dinner side dish. Thankfully now, I’ve seen the error in my ways, and I now fully embrace homemade cranberry sauce! I love this Cranberry Relish because it doesn’t need to be cooked plus you can make it ahead of time and freeze it until the big day! For the recipe, search “relish” on my blog.

My family has so many rich traditions, and most of them center around Thanksgiving. On a typical year, my family and cousins head to my great-grandparents farm where my parents now live in the middle of nowhere Kansas. Here we all catch up, hunt pheasants (not me), play tons of card games and eat so much food. Years ago what started with 12 of us is now 31! This year, we won’t be gathering for Thanksgiving like so many other families, but we are all still making our separate meals filled with family recipes to feel a bit more connected over the holiday. 🦃 what is your favorite family holiday tradition? Soaking in all the fresh mountain air! I feel very blessed to live so close to the mountains, especially now. With Covid cases surging in Colorado, we are back to mainly staying at home and exploring the mountains on the weekends. Since I have asthma, I’ve been extra cautious during the ongoing pandemic. It definitely sucks to not see family and friends, but I’m trying my best to do a small part to help stop the spread. I’m a perpetual optimist, and I know that one day things will go back to normal, and all the sacrifices will absolutely be worth it!

What is your must-have Thanksgiving dish? 🦃 🍁 While Thanksgiving may look very different this year, it doesn’t mean you can’t make yourself a classic feast to enjoy even if it is just for you or a few. The first year I lived in LA, I didn’t go home for Thanksgiving because I worked in retail and was required to work Black Friday. That year I ate Friendsgiving leftovers by myself on the couch for almost a whole week! It is true that Thanksgiving staples make the absolute best leftovers! One of my must-haves for any Thanksgiving feast is stuffing (or dressing). I used gluten-free croutons to cut down on the steps to make my mom’s version straight from my childhood with lots of butter!

So when I said I was really getting into house plants... I wasn’t lying! 😂 I seriously love my new hobby so much. I always love learning new things and challenging myself, and plants check both of those boxes. I got a little in over my head with some dramatic calatheas in the beginning, but honestly it made my obsession grow because I was determined to make the plant thrive (currently 2/3 of my calatheas are doing well - a new soil mixture arrived today that will hopefully save the other one). Pictured are 14 of my 23 plants. Picking a favorite is hard, but I have a soft spot for my Burgundy Rubber plant that has blessed me with almost 20 new leaves in 5 months and my String of Beans that is growing so long! Most of my plants come from a local nursery (), but I’ve also found some gems at , and .

Grilled up something fancy to enjoy the beautiful weather we’ve been having in Denver, especially since next week is predicted to be in the 40s! I threw together a bunch of random things into the blender to make the green sauce (fresh cilantro, fresh parsley, hatch chile seasoning, white wine vinegar and a squeeze of honey), and it turned out so good! The perfect earthy-spicy-fresh addition to the grilled steak. Finished the dinner off with foil-wrapped potatoes, onions and what I wish was the last of the zucchini from my garden.
