Ingredients:
1 can chickpeas, drained and rinsed
1 ripe avocado, diced
1 cup cherry tomatoes, halved
ยฝ cucumber, chopped
ยผ red onion, finely diced
2 tablespoons fresh parsley or cilantro, chopped
Dressing:
2 tablespoons olive oil
Juice of 1 lemon
1 small garlic clove, minced (optional)
Salt and pepper to taste
Instructions:
In a large bowl, combine chickpeas, avocado, tomatoes, cucumber, and red onion.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
